Some thoughts and discussions from me.

I know I say this every weekend, but WHAT a great weekend!!

The weekend started out with a dose of good news, (side note: I owe you guys a life update post asap!!) so that set the weekend off on a great note. Plus, we had a friend coming in town to visit this weekend. Whenever we have someone visiting us, living here even more like a vacation.

So let’s start with Friday night. Shane headed to the airport to pick up his friend who was coming in from Illinois, and I stayed behind at home. Then I got bored, and ended up meeting some friends down the street for some margaritas.

Shane and Jason ended up joining us after they got back from the airport in Denver. Fun times!

I woke up on Saturday feeling slightly foggy, but I chugged some coconut water, took a shower, and woke up and felt much better. Good thing, because I had a full day planned! First up was teaching boot camp, and then we all headed to Denver for the day. After I dropped Shane and Jason off, I met Natalie at CorePower yoga for – no joke – the hottest yoga class I’ve ever taken in my life.

Seriously – my fingers were prunes by the time we were done.  It was WAY too hot. I felt like I was being baked in the oven. But, the flow series we did was a good one, and I was in great company, so I’d still call it a win Smile

After class, we headed to the art district in Denver for lunch at Mmm Coffee:

Neither of us had been there before, so we weren’t sure what to expect, but it ended up being really flipping delicious. I had the chicken and kale soup and a salmon and spinach salad – and a homemade larabar type thing.

I had a few more hours in Denver, so next we did a little shopping. We went to Lululemon first, where I was very disappointed. I’m not a fan of the new spring colors, and the one thing I did really like – the Power Y tank in yellow – was completely see through.  Although I loved the color, you could see the bra inserts through the fabric. I wasn’t about to lay down $60 for that. Luckily I had a little more luck at Athleta Smile

After shopping we had to part ways. I had to pick the guys up and Natalie had to get ready for a dinner, but it was SO so good to see her. I’m pretty sure we talked nonstop the entire day– I just wish we lived closer to each other!! However, I accidentally left my yoga mat in her car (after first leaving it in the locker room at the studio after class– doh!) so now she has to see me again soon Winking smile

The rest of the day was pretty low key – we headed back home and went to Oskar Blues for dinner and beers. I’m pretty sure we go here every single weekend – it’s just so yummy!

Sunday all three of us were up a lot earlier than we wanted to be – we were up by 7:00! I just can’t sleep in anymore. It’s sad. However, this meant no crowds at the breakfast place we went to – Lucille’s. Here, I had my first ever beignet:

I also had pan-fried trout, topped with the best poached eggs and hollandaise sauce, potatoes, grits, and the best biscuit I’ve ever tasted. I’m such a breakfast person. It’s definitely my favorite meal of the day.

Full and happy, I came home and took Niko on a long walk before the day’s festivities. We had a hike planned with our friends, David and Katie, in north Boulder.

None of us had ever hiked around this area, and it ended up being a great hike! Challenging enough to be a good workout, but short enough not to take all day. I think it took us around 2 hours.

Plus, we had some gorgeous views!

I absolutely love hiking with a group. It’s such a good, healthy, fun activity to workout and see the sights together. I’ll do a full recap soon…after I recap Gregory Canyon. Oops…I’m getting behind!

After our 2-hour hike, we refreshed with some lunch down the street in Lyons at a cute little café with a view.

I seriously love Lyons. I’d love to move here! I had a yummy sandwich called the Buddha Bam or something like that. It was good – had brie, cucumbers, sprouts, cranberry mayo (yum!) turkey, and I’m sure I’m forgetting something.

After lunch, we headed down the street to the Whiskey Distillery:

I’m not a fan of whiskey at all, but I was happy to find out they also distilled vodka and gin. Here I tasted the best gin I’ve ever tried. After our tastings, we all ordered different cocktails and hung out for a while:

This was the gin (so flavorful!) with lime juice and club soda. It’s basically summer in a glass. Gin is my favorite liquor of them all by far. But if we’re being honest, I’m more of a beer and wine girl over most liquors.

We had talks of playing cards, drinking a bit more, and extending the weekend a bit more, but by the time we got home and showered, we were all incredibly beat (and sun burned!)
