Mornin’ Open-mouthed smile

Today I’ve got the entire day free! I plan on using the morning to get all of my to-do’s from yesterday that I didn’t get to done, and make some good headway into today’s. Then I’m headed to yoga to get sweaty, and the pool to get cool! Our community pool opened this weekend, and I figured by today, the crowdedness of it has probably (hopefully?) worn off.

Yesterday, however, was a different story! I was go-go-go with teaching and training from 7:00 am until 8:30 pm. Craziness! Finally getting that busy feeling back, and loving it. I think I like doing What I Ate Wednesday posts on busy days the most. Most of us are super busy all of the time, and I myself like to see how other people manage meals and snacks when time is limited.

So, for today’s WIAW, let’s chat about yesterday’s busy day of eats.

I had to teach at the gym farther away from my house in the morning, and after a 3 day weekend of (mostly) sleeping in, I slept all the way up to my alarm. This only left me about 20 minutes from wake time—>out the door, so I put my coffee in a to-go mug, and headed to the gym, thinking I’d snack on a bar on the way:

But then I remembered I put my bar in my book bag for yesterday’s hiking adventure. Oops. Good thing I wasn’t really even hungry yet, so the coffee was fine. Plus, I didn’t have a full belly while teaching an abs class Winking smile <—not fun!

When I got home an hour and a half later, I made a quick breakfast and inhaled it:

Sweet potato pancakes (1/2 sweet potato, 2 eggs, cinnamon, nutmeg,  vanilla extract, sea salt, cooked in coconut oil) and a side of homemade sauerkraut.

I topped the pancakes with coconut butter and some Earth Balance peanut/coconut spread that Lauren gave me. I resisted buying it for months, even after seeing tons of bloggers rave about it. Then I tried it, and now I finally bought a jar of my own. This stuff is GOOD, you guys.

I had a yoga class on tap in about an hour, and this breakfast definitely proved to be too big for yoga. The first half of the class was a bit uncomfortable, and luckily all twists were saved to the last half hour of the 90 minute class.  Nevertheless, it was a great class, and we played a LOT in our hamstrings. My last downdog felt completely different than my first.

After yoga, I washed up and walked over to my gym to teach a boot camp class. We’re in a trial/introductory period right now, and if it picks up, it’ll be a regular Tuesday thang. Here’s hoping it catches on! Open-mouthed smile When I got back home, I was ready for some lunch:

This meal was SO good! I had made it for dinner the other night, and had some leftovers in the fridge. I love leftovers for lunch! This was basmati rice, brussels, bacon, and gouda/apple chicken sausage. Then I poured this dressing all over it (for which I can thank Julie for my newfound addiction!!)

I also sipped on some coconut water:

Well, half water, half coconut waters. That ish is expensive, yo! I get two uses out of it by only drinking half the can at a time, and dilute it with water. Plus, less sugar (which reminds me…I owe ya’ll a BIG health update.)

I had a little time until my next round of clients, so I threw in a load of laundry, walked Niko, and started on this blog post Smile At this point, I had to be back in the gym to train, and knew I would be training (and working out with a friend) over dinner time, so I grabbed a smallish, part 1 dinner on my way out the door:

IMG_9977 I grabbed these hot dogs at the store over the weekend for a barbeque on Sunday night, but we ended up being WAY too stuffed from Eat Denver to even think about dinner. So we had some last night instead.

I ended up having an hour in between clients last night, so I got in my own workout. I felt like doing a mostly body weight, functional type of workout. We ended up doing this full body workout:

When I finished, I joined my friend, Katie for day 1 week 1 of couch 2 5k. Katie mentioned she wanted to complete the couch 2 5k program, and since I haven’t run in quite a while, I figured it’d be a good program for me to follow along, too Smile I was a little sweaty for my last client, but NBD.

Finally back home for good, I had part two of dinner, which ended up being Muesli Fusion (my favorite!!) with some almond butter, granola, and coconut milk.

I had this bowl, times 2 or 3. I was hungry from my workout! As I chowed down, I caught up with the Bachelorette from last night (um, poor Desiree. what a selection Disappointed smile)

Now I’m off to the DMV. gulp. Wish me luck!
