Hey guys Open-mouthed smile

Thanks for the comments on yesterday’s post! It feels good to know I’m not the only one who feels that way about turning a certain age. I actually took action on one of the items a day early:

Yep, I climbed yesterday! I took advantage of working at a climbing gym, and after my client I spent about 45 minutes climbing (and falling) on the bouldering wall. Fun times!

While today is just another work day, it’s an exciting work day – it’s my birthday! Even though I’ll be working (in fact, I’m working a little extra today, as I’m subbing for another instructor who’s out) it’s a nice feeling to carry throughout the day – and the phone calls from loved ones don’t hurt either Winking smile 

Yesterday, on the other hand, was go-go-go from 6:45 in the morning until 6:45 at night. I literally ate all of my meals on the go, save for my bedtime snack. Since I do this a couple times a week, I thought it’d be fun to show ya’ll how I pack and eat when my meals are eaten in the car or in the break room.

Breakfast: 7:15 a.m. before teaching a core class, in the gym break room:

This little concoction is, while not pretty, super delicious. It basically includes all of my favorite things. Before leaving home, I mixed together: ~1/3 c. pumpkin, coconut milk, shredded coconut, cinnamon, nutmeg, vanilla extract, sea salt, almond butter, and coconut butter. Then when I got to the gym I nuked it for a minute. On the side I had two little sausages. This meal, for some reason, keeps me full for SO long. I think it’s the high fat content.

Lunch 1/Meal 2: 11:15 a.m., before teaching an interval class, in a coffee shop near the gym:

In between my client and teaching my next class, I had a couple hours, so I drove around the corner to find a new-to-me coffee shop, Pekoe Sip House. For a couple hours, I sipped some tea and worked on some online training plans, and eventually got to my meal -  Jambalaya (I can post the recipe if you guys are interested – super dee duper easy!!) leftover from dinner. I also sipped a delicious herbal tea that I can’t pronounce. I was a little overwhelmed and the huge variety of teas they offered, so I just told the barista to make me her favorite herbal tea. Whatever it was, it was yummy! Open-mouthed smile

Lunch 2/Meal 3: 3:15 p.m., before heading to the other gym to start training:

Tuna salad – tuna, mustard, sea salt, coriander, lemon, served over cabbage, with some avocado and a piece of GF toast. I ate this after taking a hot yoga class in the afternoon as soon as I stepped in the door – while sipping a coconut water on the side. I had a total of 1.25 hours to eat, shower, get ready, and be at the other gym for my next string of clients.

I wanted a little somthin’ more after this, so I also had a bag of Popchips:

Dinner: 7:15ish p.m., after finishing training clients for the day:

Buffalo tacos! I tried to mimic the ones I had this day, and somewhat succeeded! They were a little different, since I added the tri-color peppers, but tasted just as delicious!

Udi’s granola in canned coconut milk. I’ve actually been eating this the past couple nights if I have a nighttime snack. Such a satisfying snack Smile

*note that my daily eats might look a little different than they have lately. I’ve been trying out smaller meals, spread a little more throughout the day lately. I’ll update you on why soon.

*also note that this day of eats is far from paleo. I’ll update you on that soon, as well!

I’d definitely have to go with the buffalo tacos! But tonight Shane’s taking care of dinner, so I’m excited for that, and Friday we’re going to my favorite steak house!
