Happy Sunday, friends! I’m popping in because I’ve got a recipe for you to make tomorrow night for Monday night football!

 

I’m teaming up with Silk to take the #MeatlessMondayNight challenge to help out the planet and spark some change by sidelining meat on Monday nights and incorporating tasty meatless options into the menu.

 

And as we all know, it’s football season, which means snacking and grazing whilst watching (or pretending to watch, ha!) the big game. For tomorrow night’s game, I whipped up some of my No-Bake Dairy-Free Cookies with Silk ahead of time for guests to snack on.

These puppies pack in two sources of great dietary fat – coconut oil and peanut butter, and also have oats as the main ingredients. These would make great snacks for that mid-day snack on a physically active day, too! On those days that I have my workout in the morning, and volleyball in the evening, these can provide great energy for that afternoon snackage 🙂

 

They also kind of bring me back to my childhood, as I used to devour a slightly different version at every single bake sale at which they made an appearance.

1/3 c. peanut butter (no sugar added)

1/3 c. coconut sugar

1/4 c. coconut oil

3 T.   Silk light almond milk

1/2 t. vanilla extract

2.5 c. quick-cooking oats

1/4 c. cocoa powder

 

Add the peanut butter, sugar, coconut oil, almond milk, and vanilla extract to a pan and cook over low on the stove until it melts. Add in the rest of the ingredients, and stir until combined. Scoop out with a tablespoon onto parchment paper and allow them to cool. Store them in the refrigerator. Top with shredded coconut – or some orange pumpkin spice chips if orange is your team’s color (which works both for the Bears and the Broncos!)

Yummy!

 

We’re also serving the No Bake cookies with spinach & artichoke dip, veggies and hummus, and zucchini boats w/ marinara and seasonings!

Football: who’s your team? How much do you get into football season?

I love watching the Broncos (and still the Bears!) play, but I don’t take it too seriously 😉 It’s more of a fun pastime to get into and sport to learn for me 🙂
