Some thoughts and discussions from me.

Well, hey! How’s it going today? I’m not doing too shabby over here. It’s Thanksgiving Eve, and I’ve got a short work day, and am about to go play in the gym, so that’s a win as far as I’m concerned Smile

It was a doozy, but left me feeling on top of the world! I love when that workout high Open-mouthed smile

Weird thing happened, too. I typically eat right after waking up, but yesterday, I completely forgot, and did my workout in a fasted state. Some how, it was an awesome workout! But when I got home, I fixed myself up a nice big meal:

I had this high protein, gluten-free, breakfast crepe! I also had a side of two turkey sausage links and some sauteed kale along with it. I posted the recipe for the crepe on instagram the other day, but I’ll post it here, too Open-mouthed smile

High Protein Breakfast Crepe

serves 1

2 eggs

1/4 c. oats

1/4 c. cottage cheese

1/8 c. almond milk

1 T. coconut flour

1/4 t. sea salt

1/2 t. vanilla

more cottage cheese

frozen berries

almond butter

Put all of the ingredients except for the cottage cheese, berries, and almond butter in a blender, and blend on high until smooth. Heat some coconut oil or ghee in a pan over medium heat. Pour the batter into the pan, and let it cook for about two minutes. Lift the sides carefully, to make sure it’s not sticking. Carefully flip the crepe to cook on the other side for about 30 seconds. Slide out onto a plate, add your cottage cheese/berries/almond butter mixture, and roll into a crepe.

After breakfast, I hurried up and got ready for a demo I had for KIND down in Denver. It feels like I have been driving to Denver a LOT lately. I usually don’t mind it if it’s once or twice a week, but sometimes driving in high traffic areas can be stressful. Luckily, yesterday I just listened to a podcast, sipped on my favorite Zeel Kombucha, and didn’t run into too much traffic. Plus, the demo was pretty fun!

I drove right back up to Longmont after the demo, and headed into Old Town Outfitters to score on their 30% off sale! Picked up a Patagonia vest and a Prana shirt for a really great price. Score Open-mouthed smile It was then, that I realized I hadn’t eaten anything since breakfast, 6 hours ago! And I still wasn’t even hungry. Just for the sake of eating, I grabbed a KIND bar and snacked on it on my way home:

I’m digging this flavor lately, but I’d have to say my two favorites right now are Maple Glazed Pecan & Sea Salt and Peanut Butter and Strawberry Hot smile

When I got back home, I took Niko for a nice long walk. We haven’t been able to get out the past few days, so we stretched our legs out for a good hour in the sunshine. Then I came back home and did some computer work, and did a little cleaning.

Perhaps eating after training threw my appetite off the entire day? Because I didn’t get hungry until around 6:00, when I made dinner…snacking on Nut Thins and Lentil dip while cooking:

And then about a half hour later, dinner was on the table!

Pork chops, salad, potatoes, and asparagus. Aw yeah, that’s the stuff.

And then a couple hours after dinner, I went in for a nighttime snack of Quest bar, Fage Total, and almond butter:

A very odd day of eating for me, for sure. Actually, I would very much prefer to just do two big meals every day, because eating lunch is annoying.
