Some thoughts and discussions from me.

Hi there!

What a great weekend. Friday included just a couple clients, my favorite yoga class with my favorite instructor (she comes up with thought-provoking quotes or literature, creates the most beautiful flows, makes you sweat buckets, and then gives you a damp, essential oil-infused towel at the end!) and then concluded with some more fun:

Drinks and dinner at Oskar Blues (my favorite!) There’s a brewery down the street from us, but we love going to the restaurant to get the best of both worlds – beer and delicious food. We were doing some celebrating of sorts, so we went all out with drinks, appetizers, and dinner.

To say I was stuffed afterward would be an understatement. We even turned down going out afterward and I went to bed without dessert – two rarities Winking smile

Then Saturday was jam-packed. It started off with boot camp – I taught it and Shane participated – and just kept going full speed from there. After boot camp and doing some things around the house, Shane and I drove to Gregory Canyon to meet Heather for a hike!

Shane and I had already had a hike on our schedule, and it worked out for Heather to come along and join us Smile It was my first time meeting Heather, and she’s just as sweet as she is on her blog. It was a tough, shorter (a little under 2 hours,) and gorgeous hike near Flagstaff Mountain.

After our hike we had to say goodbye to Heather – we had LOTS to do in little time. Unfortunately, the two places we needed to go were kind of a bust, but we did get to Whole Foods to grab some groceries, along with some appetizers for a get together we were having later. Then we raced home, showered, and went to church, me with no make up and wet hair (wet hair, don’t care Smile) and set up for our guests. We had a few friends over for drinks, pizza, and cards, where I stayed up way past my bedtime and drank way too much wine. Oops. Unfortunately, my body likes to punish me, and even though I went to sleep after 1:00, I was up bright and early at 6:30. Well, maybe Shane’s snoring had something to do with that, lol. It’s ok, I got a nap later Open-mouthed smile

We also went out to breakfast for some greasy recovery food (ha!) and then played around a bit.

We found this cute market across the street that sold home-baked gluten free bread, pastries, and more. I came home with some pork sausage and homemade tamales.

The rest of the day involved cleaning, a couple errands (Target and Sprouts,) writing client training programs, and then the most epic post-fun night lunch ever.

Leftover  double cooked skillet pizza!

So I’ve told ya’ll how my favorite way to heat up leftover pizza is in the skillet, which is in amazing in itself. But I learned a way to make it even more awesome. It’s better than cold pizza, microwaved, or reheated in the oven. My friend Jamie, who was over this weekend, told me about it, and I’ll never reheat pizza another way again! Here’s how you do it:

Heat up a little olive oil over medium heat in a skillet. Add your pizza slices to the pan, crust side down, and cook for about 2-3 minutes. Then, and this is where to super tasty part comes in, flip over the pizza so the cheese side is face down and cook for another minute or so.. Not only does this heat the pizza all the way through, but it also gets the cheese all melted and kinda cooked and just delicious.

The rest of the day I finally relaxed and we all took a family nap. What a weekend!
