Some thoughts and discussions from me.

I had to do a double take when I looked at the calendar this morning. Wait, what? Tomorrow is May 1st?!

image

When did that happen?!

The past 5 days have been spring – almost summer – like, and it sure has felt like the winter weather is long gone. But low and behold, Colorado weather is at it again, with a chance of snow tomorrow on the 1st day of May. Craziness.

Luckily, the warm weather stuck around last night for my neighborhood’s kick off to Food Truck night!

Starting in April every Monday night – the last two Monday’s were snowed out – my neighborhood hosts a Food Truck night, complete with a band, dozens of food trucks, lots of people, and drinks. It’s the largest Food Trucks gathering in Northern Colorado!

Shortly after it got started, I headed over with several friends to mingle and get some good eats. There were so many delicious choices, from Chinese sandwiches, to Thai food trucks, to gourmet grilled cheese, and more.

I ended up getting a coconut lamb curry with basmati rice from Heirloom. It was pretty good!

But then we all headed over to the dessert trucks. I bypassed the froyo truck in favor for what else, but…

waffle cakes!!! As soon as I saw they offered gluten-free cakes, I was all over that truck.

Cheers to ice cream topped waffle cakes Open-mouthed smile

April Goals Review

Since it’s the last day of the month, I thought it’d be a good time to go back and review the goals I set at the beginning of the month.

So, how’d I do??

Only check iPhone email 3 times a day

Can I get a collective Womp Womp on this one?

I suppose I didn’t fail miserably on this one. I did cut my iPhone checking time down considerably – especially at stoplights. But with the house selling and other events, there was a lot of urgent email being sent back and forth!

Meet a new friend

Check! Check! I met Heather earlier this month on a hike Smile

I also met Lauren this month, and then just last week Shane and I finally hung out with some of our other neighbors!

Do something nice/thoughtful for friends/family back home

Check! I sent my dear friend Kimberly a care package for her baby on the way Open-mouthed smile I also bought my mom some earrings.

She loves turtles Smile Cute, right??

Finish The Stand + one more book

Um, fail. Do you know how flipping long The Stand is?

image

Way long. But I am half way through it, so there’s that. And it’s a really good book – set here in Boulder, Colorado (well, mostly) so I’m into it.

Be more organized – everything has a “place”

I have been SO much better at this one. I’ll leave something laying around, start to walk away, and then think, Paige, just go put it away now. It works! I’ve been much more organized this month, and hope to continue it in May, too. Plus my Day Planner app helps me a LOT.

Go on at least 1 hike a week

Double check. I went on lots of hikes this month!

image

Go on two mid-week hikes

Yup! I went on this one with Lauren on a random Wednesday, and then last week after teaching a core class be myself.

image

Find 2-3 new hiking trails

Check! Hogback Tailridge (which I still need to recap) was new to me, as well as Gregory Canyon!

Can’t wait to explore more new trails in May Smile

I’d say all in all I did pretty darn good with my goals, if I may toot my own horn. I think the key is to make them fun, easy, and doable. Forget SMART, we’re all about FED goals over here Winking smile haha

And now it’s time to head into the gym to teach a Core BLAST class. See ya’ll tomorrow!

What would you choose: froyo/ice cream or waffle cakes?

PS – thank you, everyone, for sharing my excitement on yesterday’s post. It means a lot!
