Love Trader Joe’s as much as I do?!

This one’s for you.

I imagine you enjoy healthy dinners that are also easy and quick?

Yeah, me too. It’s all I cook!

In an ideal world, all of my dinners would be made from scratch, 100% of the time. I’d say that’s the case 85% of the time — but I do take short cuts. And if you’ve ever meal prepped from a Trader Joe’s haul, you know TJ’s is the king of shortcut meals.

All of the meals below take minimum time to prep, and not much time to cook either.

Meal 1 – Pesto Chicken, Butternut Squash, & Broccoli Sheet Pan

Yes, that’s a picture of potatoes and mushrooms, but I switched those out with broccoli. Preheat the oven to 400 degrees. Cube chicken and put it on the pan. Dump the butternut squash on the pan, and the pre-chopped, pre-washed organic broccoli. Toss is all on the jarred TJ’s pesto and cook for about 20-25 minutes.

We had this last night and it was a huge hit!

Meal 2 – Tuna Burger Sandwiches & Side Salad

Pretend that broccoli is a bag of organic greens.

For this meal, which we are having tonight, I’m cooking up a couple tuna burgers, and then making grilled sandwiches with them. I’m adding avocado and a little cheese and grilling them on the stove, along with a side salad.

Meal 3 – Cauliflower Gnocchi + Chicken Sausage

This one is SUPER simple. It’s basically cheating! Cauliflower gnocchi + chopped apple chicken sausage + jarred vodka sauce. I addded a HUGE handful of spinach to the mix, too.

We had this two nights ago, and I loved the combo. Even my husband loved it — which is surprising, since I thought he’d turn up his nose at cauliflower gnocchi.

Meal 4  – Fajita Sheet Pan 

I’m on a sheet pan dinner kick. What can I say? The ease and minimal clean up appeals to me HARD.
For this meal I’m using TJ’s organic chicken tenders/strips, chopped organic bell peppers (3) chopped onion, garlic salt, TJ’s chile lime seasoning, and lime juice.

Preheat the oven to 400 degrees. Place everything on the pan. Coat it in olive oil and seasonings, and toss to coat. Squeeze the juice of a lime over everything. It should be done in about 20 minutes or so.

Meal 5 – Sweet Potato Gnocchi w/ Sweet Italian Chicken Sausage

Another easy peasy one. We are planning to have this with chopped asparagus added to the gnocchi pan to cook for some extra veggie power!

BONUS Meal 6 – Treat Meal! Cauliflower Pizza w/ Pepperoni + Side Salad

 

Unless I’m out with friends, pizza, a glass of red, and a good book is my favorite off-plan meal. Make it not quite as off plan with this cauliflower crust! I haven’t tried this one yet, but I’m planning to this week.
