Some thoughts and discussions from me.

Good morning, babes! Thank you so much for all of the well wishes. I’m happy to say that I’m feeling much better, and the pain is really starting to dissipate.

I have never been one to hide that I take absolutely as many short cuts as I can in the kitchen. I buy pre-cut and washed veggies, pre-cooked meat, bagged lettuce mixes, and easy to make starches like sweet potatoes, and microwave rice.

Truth be told, it’s not that I necessarily hate cooking, but it’s just that I’d rather spend my time either being productive with my training business and clients – or living life! (And I actually consider the former to also fit in the latter category ;))

So, when the opportunity to try out Eat Smart‘s Salad Kits presented itself, I was ALL ABOUT IT.

Before I go into my review, let’s talk about exactly what these salad kits are:

  • Each has at least 11 grams of plant-powered protein
  • They all have a variety of salad veggies, dressing, and add-ins like cheese, dried fruit, nuts, and seeds
  • They’re gluten-and preservative-free
  • They fit into my less-think less-prep more-nutritious food that fits my lifestyle in my belly- philosophy!

They’ve also been LIFE SAVERS since I’ve been injured. I’ve found myself hobbling down the stairs, and slapping one together in 3 minutes. They’ve also worked quite well for our Meatless Monday Nights!

Take the Eat Smart Super Caesar Salad:

In this 6.2 ounce container includes:

  • Collard Greens
  • Italian kale
  • Red chard
  • Broccoli
  • Cabbage
  • Dry-roasted edamame
  • Sunflower seeds
  • Chia seeds
  • Parmesan cheese
  • Dressing

I’m not kidding you!!

My first thought was: This will be PERFECT to take to the gym and eat between clients! So as I was putting it together, I tried a little bit just as is, and it tasted SO good. Mental note: dry-roasted edamame is amazing in salads.

Also, since I’m ALL about convenience and time-saving when it comes to my nutrition, I like that you can mix it and eat it right out of the container that it comes in. Quick, easy, nutritious, and no dishes! Ha!

Anyway, when I took it to the gym, I also added a couple organic meatless balls and some avocado for even more protein and healthy fats.

It was incredibly filling – and delicious. It held me over through my last couple clients, which is probably from all of the protein, fiber, and healthy fats packed in!
