Good morning, my friends!

No What I Ate Wednesday this week, but eats have been pretty boring, anyway. I stick to a pattern of meal rotation that goes a little somethin’ like this:

  1. butt-crack-of-dawn-breakfast
  2. mid-morning breakfast
  3. small lunch
  4. bigger dinner
  5. bed time snack/dessert

It’s workin’ for me Smile However, there’s also those moments – especially on heavy workout/activity days – where I need a little something extra. This “something extra” is usually pretty soon after a workout or shortly before one.

The moments I need a pre- or post- workout snack. What I’ve been going to (every.single.time) lately?

No Bake Protein Bars! – featuring MuesliFusion.

This recipe was actually posted on the MuesliFusion blog last week, but I thought I’d post it on here for you guys if you hadn’t check it out yet.

Let me preface this by I think these are the best protein bars I’ve ever made – ever, ever!! And the best part? There’s no oven, stove, or cooking device involved! (Well, unless you add the chocolate coating, which you need to melt in the micro, but that’s easy peasy.) Ready for the recipe?

No Bake Protein Bars

Prep time: 10 minutes

cook time: nada

freeze time: 2+ hrs

Makes: 16-18 bars

1 large, ripe banana

1/4 c. melted coconut oil

1/4 c. almond butter

2 tbsp. milk (or non-dairy milk)

2 c. Super Muesli

110 grams (about 5 scoops) of vanilla whey protein powder (I used Tera’s Whey)

3 ounces of high quality dark chocolate (I used dark Chocolov)

In a large bowl, mix the banana, coconut oil, almond butter, and milk together until combined.  Add the protein powder and muesli fusion and mix until combined. Line an 8×8 pan with parchment paper or aluminum foil. Press the mixture firmly into the pan, smooth, and place in freezer for at least and up to 4 hours. When the bars are firm (and cold!) cut into 3 inch squares. Optional: melt the dark chocolate in the microwave, and dip one side of the bar into the chocolate for a chocolate coating.  Store the bars in the freezer.

Wrap each bar individually in plastic wrap for a quick and easy grab-and-go snack! They also make for a great post-workout snack if you need something before your next meal Smile
