Good morning, my friends Open-mouthed smile

I’m in high spirits this morning because yesterday, I made the drive into Greeley, CO to take my ACE Group Fitness Instructor certification exam – and I passed!

I’m a very nervous test taker (I doubt myself so much!) so I didn’t go into too much detail in the blog. But for the past week, whenever I’ve said I’m “studying,” it’s been for this exam.  Luckily the exam was pretty straight forward and common sense, as long as you studied a bit, and had a decent background of fitness, anatomy, exercise programming, and such. Good thing, because I’d forgotten about the exam completely until I received a little email in my inbox saying, “Your exam is less than one week away!!” Ooops.

Anyway, after driving back home and getting a few things done (i.e. tackle emails that had been pushed back because of studying!) I headed to the gym to train my evening clients. I didn’t get home until 8:00, and have a quick turn around, as I have to be at the gym in about a half hour for my first client. All part of the job Winking smile

So last week for What I Ate Wednesday, I showcased a long day filled with clients and classes – a busy day. Today I thought I’d share with you a day of eats on my least busy day – Sunday!

I purposely try to make no plans at all on Sunday, aside from church. It’s my day to recharge, relax…and clean, haha.

This past Sunday I started off the morning with a walk with Shane and Niko. It was a crisp and sunny morning and perfect for a morning walk! About an hour later, I was in front of the stove, making us some breakfast:

After breakfast, we headed to church, and then did some grocery shopping at Sprouts. They were having a sale of grass-fed beef for $4.99 so I stocked UP. I also picked up more avocados. They’re SO cheap right now! And so delicious. I probably have 5 ripening right now in the pantry. Ob-sessed.

Moving on, shortly after we got home and did some cleaning up around the house, I made some lunch, which was simply reheated leftovers that were in the fridge.

chicken, broccoli, and sauce (I think this one was coconut aminos, ginger, garlic, s&p, crushed red pepper, and a bit of coconut milk) over a big bed of basmati rice.

Sunday was pretty much dedicated to studying for my aforementioned group fitness classes. I studied for about 5 hours – a couple of them being at the pool. Right around the time I was ready for a break, I received this text message from my friend Katie:

A group of us were planning on having happy hour and making some margaritas. We had the tequila, our friend Susie had the orange liquor, and Katie was in charge of picking up a lime….or 80. LOL It was pretty funny. Then soon our friends gathered on the deck for some margaritas, carrots and hummus, and chips and salsa.

After we parted ways, Shane and I got started on a simple dinner of burgers and fries:

I hadn’t gotten in my once-a-week burger, so we had to do something about that Winking smile And these turned out delicious!

We were both sufficiently full after this meal, but we rallied for this dessert…

This would be (gluten-free) muesli banana bread!  Ya’ll know by now that I’m pretty obsessed with MuesliFusion Morning Zest (my fave) cereal. I had about half a bag left the other day and decided to turn it into banana bread. Thankfully it turned out really good, or I’d be pretty ticked off about wasting the stuff, haha. I planned on sharing the recipe today, but I’m running out of time! Gotta go train a client, but I’ll have the recipe up tomorrow Smile
