Some thoughts and discussions from me.

Happy Friday! Open-mouthed smile

Yes, I sense the irony in calling this post “coffee talk” whilst sipping tea.  Regardless, there’s some things I want to catch you up on. Not important things, just some chit chat – stuff that’s been goin’ on in the life.

Last weekend after church, Shane and I took advantage of the temps in the mid-sixties (f’reals) and took Niko to a nearby trail for a long walk:

The St. Vrain Greenway spans 8 miles, and follows along the St. Vrain River. The trail’s dog-friendly, and doesn’t skimp on expanding mountain views.

Good times. You really can’t beat Colorado weather. Unless you’re in Hawaii, I guess. Then you win.

Don’t you judge me by my scrunchie. I had no other hair ties, but for some reason had a big pink scrunchie around my gear shifter thingy (ha) in my car.

Unfortunately the 60’s temps were fleeting. Now it’s in the 40’s, and we got snow! (That’s a good thing here, I’ve learned. We need snow because it’s been so dry.) Now that it’s cold (and snowy!) again this week, hot yoga classes have been that much sweeter.

Guess how many classes I’ve been to since I signed up on Tuesday?! THREE. I went Tuesday, Wednesday, Thursday, and I just might go again today, dag nabbit. Why? Well, a) I’m a bit obsessed with how good it makes me feel, b) I can really feel myself improving in some of my yoga postures, which is really, really, really rare and weird for me, and c) It makes me feel better about the pricey membership cost. more classes/week = less $/class. Simple math.

I think the only thing I’m more obsessed with than hot yoga right now would be…

THE Mr. Ron Swanson. Let’s talk Parks and Rec for a second, and how Ron Swanson just might be the best character to ever be a character on a show. Everything he says, makes me laugh, and he love for breakfast just might rival mine.  Heck, his facial expressions deserve their own show! Shane and I are already on the third season, and I’ll be a sad Paige when we catch all the way up.

Watch out, bacon and eggs. Here I come!

No, really. Wednesday night I made PaleOMG’s bacon chicken alfredo  and fell in love. Shane didn’t partake in the meal, and I’m pretty sure I ate 4 servings worth. I was so stuffed by my 2nd huge bowl. But not too stuffed for one of her cookies. Paleomg’s recipes pretty much blow me away. Even if you don’t eat “paleo” I’d seriously consider giving this alrefredo a try. Plus, it’s super easy to make. I’d show you the picture I took, but honestly, I couldn’t get a shot that didn’t look like cat food. But it’s delicious. Instead, here’s a cookie, one of which was eaten last night, too.

The paleomg cookies are finally (I say finally like it took me longer than 3 days to finish the entire batch) out of the house. I ate the last of them last night while going on a Reality TV binge. Now that I know who Sean dumped this week (and what he thinks about Tierra,) whether or not Brandi really got served with a lawsuit from Adrienne (I’m thinking she did,) and that Scott has the hots for Khloe. All is right in the world.

Except that I’m out of cookies. I think I’ll make some CCCB’s next.

Or maybe I’ll make them for breakfast. It’s FRIDAY!!
