It’s Wednesday. It’s a busy little day for me, and I had kind of a rough one yesterday. It’s my early morning training day, so not much to say other than let’s get into this post! Also: can you believe it’s already Wednesday?

Breakfast – 7:30 AM
My new favorite breakfast – pumpkin protein pancake topped with baked apples and plain Greek yogurt.
(Paige’s) Pumpkin Protein Pancake
1/3 c. pumpkin
1/3 c. egg whites
1 scoop vanilla protein powder (I use brown rice pp)
2 tbsp. oats
cinnamon
mush in a bowl until combined, and then pour onto a heated pan, sprayed with some nonstick spray on medium. Cook for 3-4 minutes a side.
Snack – 9:45 am
Post-doctor’s appointment latte to make me feel better. Doctor’s appointments (and blood work) suck and make me not happy. Lattes are awesome and make me happy! ![]()
Lunch – 1:45
Leftovers from Sunday night’s crock pot fest. Farmer’s market chicken, potatoes, and carrots, with a side of leftover veggies (kale and okra) from Monday night’s dinner. Yumminess.
I also had some of this calm drink about an hour after lunch:
Snack – 4:00
Healthy Breakfast Cookies + milk, aka, more comfort food ![]()
Healthy Breakfast Cookies
Time: 18 minutes
Makes ~1 dozen cookies
1 stick of unsalted butter
1/2 c. white sugar
1/2 c. light brown sugar
1/2 tsp. sea salt
1 tsp. cinnamon
1 large egg
1/2 c. oats
1/4 c. almond meal (could probably use flax meal here too)
1/2 c. whole wheat flour
1/2 c. all purpose flour
1/2 tsp. baking powder
1/4 c. chopped dried cherries
1/2 c. chopped dried apricots
1/2 c. chocolate chips
1 c. chopped walnuts
Preheat oven to 350 degrees. In a large bowl, beat the butter, sugars, and salt at a medium speed until light and fluffy. Beat in the egg. Stir into the mix the oats, almond meal, flours, cinnamon, and baking soda until combined. Stir in the rest of the ingredients. Scoop out the dough in a little larger than a tbsp. scoops onto a large baking sheet, and bake for 11-13 minutes. Let cool on the pan for 1 minute, then transfer to a wire cooling wrack.
Dinner – 6:30
Salmon, sweet potato, and green beans. Boring? Maybe to the eye, but it tasted fantastic!
Dessert – 8:30
small bowl of kettle corn w/ mini chocolate chips sprinkled on top, microwaved for 30 seconds. Un-pictured because I got up to get it during the middle of watching Dexter!
Anyone wanna talk about the first episode of this season, by the way? Holy lots going on!!

And by ‘breakfast cookie’ I presume you mean ‘all day every day cookie’, correct? They look delicious!

I can eat the same thing over and over. I don’t mind leftovers at all! However, I bet that would be killer as a pizza or mix it with cornbread dressing to make it a completely different meal! Also, freezing it for quick dinners later works well too! Oh and breakfast cookie…YUM!

I really need to try those pancakes. I normally don’t care for them, but I think they’d be perfect for weekend breakfast – especially after a long run.
They only take about 5 minutes to make! But then ya gotta clean the pan, which is kind of a bummer, haha
I am not a leftover fan, so if I do eat them – only once.

that pancake looks so good! Pumpkin lattes make everything better. I am the only one who eats leftovers in my house, I hate wasting food and my boyfriend is weird/ picky about them. I have been drinking that calm water at night time I received it in this months KLUTCHbox and my boyfriend and I are really loving it!

I love leftovers, but I get really weirded out if they’ve been in the fridge too long. If it’s been longer than a few days, I’ll throw them out, even if they look and smell fine. Paranoid, much? Plus, I love healthy cookie recipes! Makes me happy : ).

The cookies look yummy! I could eat leftovers for about 3 days as long as it was a super delicious meal. Leftovers make lunch so easy too!

I don’t have Showtime but they put the first episode on Youtube and now I am seriously contemplating getting Showtime. Do you think what happened at the end really happen or that Dexter was just imagining it or having a bad dream?

Making a giant batch of baked apples at once for topping purposes is such a time-saver! I usually just heat ‘em one at a time in the microwave, but then again, that’s probably why I’m usually rushing to throw meals together
I’ve been alternating leftovers, so that I don’t have the same thing two nights in a row. Unless I really want it again immediately, which means it was a really awesome meal!
