Staying on Track with Healthy Eating–What I Ate Wednesday
The other night, this is what I cooked for dinner:
barbeque chicken, green/yellow beans from this week’s CSA (roasted @425 for 20 mins) – or as Heather told me, they’re wax beans - and potato wedges
As Shane and I were cleaning up the kitchen after dinner, I found myself over at the stove, eating the leftover potato wedges that we didn’t put on our plates.
"I eat a LOT" I said to Shane and chuckled. "Probably more than you!"
"Yeah, you do, but it’s all healthy stuff!" he said back.
It’s not ALL healthy stuff, but I do tend to stay on track with healthy eating, and follow the 80/20 principle. I find that sticking with this principle – without over thinking it too much – keeps my healthy eating balanced.
Yes, I try not to overeat at each meal and snack, and I when I eat them, one of my main goals is making them healthy, but I’ll also have a couple French martini’s now and then and follow it up with splitting some white chocolate bread pudding for dessert.
And afterward? I don’t feel as though I’ve "fallen off the wagon" or my eating has gone to crap, so I might as well let the rest of the day’s eats be unhealthy, too. I enjoy the indulgence, and move on to the next healthy choice.
Of course, everyone feels food guilt from time to time (myself included) but I find that if I fully enjoy my indulgences, I can keep a fairly good balance of healthy eats/indulgences, or 80/20…ish
Take yesterday’s eats, for example:
Preworkout (and during):
1/2 c. oatmeal (I finally had an oatmeal craving! so I went with it) + 1 c. almond/coconut milk w/ PB and Greek yogurt, 3 egg whites w/ sea salt and nutritional yeast
My Cookie Dough Healthy Bites order from Lindsay came the other day, and they definitely live up to the hype. I popped two or three of ’em about an hour before lunch.
(Leftover) barbeque chicken w/ spinach and tomato in a tortilla, leftover green/yellow beans, apple
Plus some green tea a little after lunch.
carrots + homemade guacamole
homemade pizza – this crust + pizza sauce, spinach, tomato, jalepeno, horizon mozzarella, sausage from the farmer’s market and a side salad of spinach, tomatoes, + organic ranch
Plus a beer while rollin’ out the dough:
Alden’s ice cream
Shane picked up a carton of our favorite kind on Sunday, so I’ve been having ice cream about every other night for dessert. Some nights I want a little something sweet after dessert, and sometimes not.
Side note: I told my mom the other day that ice cream is probably my favorite food, and she said, “I know! I can tell from your blog!” And I say, “…is it that obvious?!” and she’s like:

I’d say that’s about 80/20, right? Perhaps maybe like 75/25? I’ll call it good.
