What I Ate Wednesday–Surrounded by Fitness

Oh coffee, you complete me.


I’ve been trying to limit my coffee to one cup, but honestly, ever since Estes Park, I’ve been failing miserably. Just need that one extra cup!!

Today I thought I’d participate in the ever popular What I Ate Wednesday.

Yesterday was a particularly interesting day of eats, due to my workouts, and since this month’s theme is fitness, I thought it was fitting, no? Smile

Let’s dive right into it!

Breakfast #1  – 7:45 AM (post-coffee, pre-workout):


1 thick (probably worth 2 slices) of whole grain toast, topped with a little PB2, jam, and yogurt mixture, and some black berries. This was my pre-workout breakfast, which is why it’s lacking a little in protein and fat. My workouts are best done on mostly carbs, so this had the perfect ratio for me.

Plus, it settled down just in time for a 9:00 Body Attack class.


I have to admit, I was a little out of my element – especially since I was one of five class attendees. The only class I’ve taken at my gym in the past year has been spin and yoga, but since this week is my self-proclaimed group fitness week, I stepped out of the box. Luckily, I had a blast, and was surprised by how sweaty I was when the class ended.

It provided a good mix of strength and cardio, so by the time I got home and showered, I was ready for breakfast #2

Breakfast # 2 –(post-workout)  10:30 AM :


Fruity PB Chocolate protein shake, made with these ingredients:


+ ice, almond/coconut milk, strawberries, and banana.

And lots and lots of water.


Lunch – 1:45 PM:


This would be the leftover spaghetti from Sunday night. It was just as yummy, but this time I combined my leftover zucchini noodles along with some of the quinoa blend pasta, too. Delish.

Snack – 3:45 PM (pre-cardio):


Apple and BCAA’s. I had a half hour in between clients, so I hopped on the elliptical. The apple and BCAA drink provided me with enough fuel to get through a half hour of cardio + 2 more clients.

Dinner – 6:30 PM


I was more than ready for dinner when I got home, so I threw together what I thought would be easiest and quickest, which was breakfast for dinner.


2 eggs + 1 egg white, zucchini, tomatoes, corn, and a piece of corn bread. Yep, I finally got my most favorite bread out there Smile Glorious.

Snack – 8:30 PM (post Niko-walk, during Game of Thrones:)


After dinner I took Niko for a little walkie, and when I got back it was time to watch some TV. I had a snack of Greek yogurt, black berries, almond butter, and stevia. After my third day in a row eating ice cream, I thought it’d be wise to switch it back up to something with a little less sugar Winking smile

So there you have it! A day of eats built around a day of fitness. Just a typical Tuesday!

  1. Love all the meals!!! I typically split up my breakfast too and have some greek yogurt or a couple eggs before my workout and then a smoothie with whey post workout! It works perfect for me!

  3. It completely depends on the day. If I workout really early then I don’t eat anything, but like today…I had oats with some protein powder topped with unsweetened applesauce. I’m hoping to workout in the next hour so that should have time to settle…I hope.

  4. First and foremost, all of your meals look delicious! I find it funny that I told you not to forget about WIAW last week, and here I am today with no WIAW post :[ I kept forgetting to take a picture of all of my meals yesterday until the last bite… and I’m sure no one cares to see an empty plate haha.

    **I don’t always eat a pre-workout snack. It all depends on how long of a workout I’ll be having. If it’s 45+, I’ll usually have a banana. Now that my gym doesn’t open until 11 because of Ramadan, I’ll usually eat whatever I’m having for lunch that day right when I get home.

  5. Cornbread is seriously amazing! I always go with PB before a workout and yogurt after. Also, I nominated you for one Lovely Blog :)

    And when it comes to post workout eats, I’ve been sticking to the morning routine, so post workout usually is egg white scramble of some sort. Oatmeal sneaks in about once a week… but that’s about it!

  7. I usually eat breakfast after my workout since I get up and go straight to the gym!

    p.s. what do you think of breaking bad so far, I am kind of bored with it!

  8. Before – usually a banana, if its a longer workout I add pb toast too. After is usually a meal since I workout either in the am or after work. I try to make sure I always get protein in after.

I noticed your using P2B I recnetly got a jar of the PB and chocolate PB flavor and love it for smoothies, in yogurt, or in cottage cheese, but I don’ think I like it on bread like PB its just not the same, but I’m def going to buy more! I’ve been wanting to try zucchini noodles and after seeing your lovely photo I think I will have to try it out!

    • Yeah I prefer reg peanut butter on bread/toast, too, but I also don’t like to eat fats before a workout, so it works…well enough :)

  10. I love cornbread!!! I usually work out first thing in the morning so my post workout meal is Oatmeal with flax seed meal and almond butter.

    Thanks for stopping by my blog the other day, the scar is thankfully not that bad, plus its a healthy little reminder that sunscreen is my new best friend.

  11. I like how you fueled your workouts with the right food choices. Nutrition and Fitness go hand in hand and your photos are a great example of that. The smoothie looks great! I JUST tried PB2 for the first time this morning on my Protein Pancakes and am looking for new ways to use it.

  12. I’ve seen a lot of people putting gums in their smoothies. What do they do? Before a weekday workout (5:30 am), I eat nada. I’ll usually drink coffee when I get home and sit down to a breakfast around 8am. This morning it was greek yogurt, blueberries, chia seeds and homemade granola.

    • Together xantham and guar gums thicken up the smoothie so it’s more ice cream-like. I only use 1/8 tsp of each!

  13. Everything looks yummy! I typically only eat after I workout, but if it is a race or a long run I will eat some toast with peanut butter before hand.

  14. I’ve been addicted to the Green Mountain Coffee Company k-cups too, lately. Lovin’ the hazelnut and I’ve really wanted to try the wild mountain blueberry, but haven’t……. YET!

  15. ALl your eats look fantastic. I’ve been obsessed with making smoothies the last couple of days. And I’m also addicted to my coffee. Its just not a fabulous day without it;)

  18. Hi, Paige! What a great day of eats! So do you recommend limiting the protein intake for pre-workout snacks or meals? I’m doing total body conditioning class at my gym which includes both cardio and strength training. I know that protein takes longer to break down, but I thought that it’s good to eat before and after. I normally eat a hard boiled egg or yogurt with a side of toast or banana as a pre-workout meal and usually a protein shake after.

    • Protein is fine beforehand, but carbs should be your main source of fuel, as our bodies turn to glycogen first – but it’s not a bad idea to get some protein in there, too. Dairy just doesn’t always set well with me – but good call on the HB egg :)

  19. I hear you about the ice cream; always tastes so good in the moment, but leaves me feeling blah later on (and kicking myself for the extra calories and fat!). Good call on the yogurt!

  20. My pre-workout eats depend largely on the time of day that I work out. During the week I eat dinner and then work out after dinner – it’s not the ideal situation but it’s what works for me now. After working out I love an ice cold protein shake!

  21. I usually eat a banana with almond butter and Fitmixer aminos before, and some sort of protein after! Your eats looks really good! What kind of BCAAs do you use?

  22. pre workout is my breakfast, so oats + fruit + eggs and post workout is a protein shake with fruit and then a solid meal a little after :)
