Healthy Chicken Salad

So, happy Friday! It’s Friday, right? I’m ALL messed up this week with my days – anyone else?

Last night I had about 20 minutes between clients, and I had some energy to burn. So I put myself in an empty little corner of the gym, gathered a medicine ball and a mat, I went through this workout 3 times. Kicked my booty! And I worked up a pretty good sweat, which I attribute both to the workout itself as well as the humidity that the gym had been leeching in from outside all day.

After training my last client for the afternoon, I headed home, cleaned out my car (guh) and put together this cool little dinner to have on a beastly hot evening.

Guys, it’s even too hot to use the grill right now! Plus, apparently, I’m all about making salads out of “non-salad” food. Like healthy chicken salad! – in a whole wheat wrap, with a side of carrots and hummus.

I’m all about not turning on the oven, grill, stove, or heck – even the microwave! – right now. So when I found a little can of organic chicken, I immediately picked it up and thought “chicken salad!”

I literally put this together in 5 minutes (but I’d already had my onion and red bell pepper chopped up) and it was such a hit for both Shane and myself.

Healthy Chicken Salad

Serves 2

1 can (organic) chicken
2 eggs, hard boiled and chopped
½ c. red grapes, halved
½ red bell pepper, finely chopped
2 tbsp. onion, finely chopped
½ c. pecans pieces
¼ c. olive oil mayo
¼ c. Greek yogurt
2 tbsp. lemon juice
Salt and pepper to taste

In a small bowl, make the dressing by combining the mayo, Greek yogurt, lemon juice, and salt and pepper. In a medium bowl, mix together everything except the dressing. Stir the dressing until everything is evenly coated. Chill for at least 20 minutes.

Do you try to avoid appliances that produces hot when temps reach scorcher-status?

I know I sure do – I even had a hard time drinking my hot coffee yesterday!

  2. We have maybe 1-2 days a year its too hot to use certain appliances, like the oven so then we grill, not sure its ever hot enough here not use it.

  3. i rarely EVER use the oven during the summer months unless it’s at night or early morning. we grill everything and anything, and i also make a lot of salads and sandwiches for dinners. this chicken salad looks awesome – i’ll have to try this one out too!

    I assume I’ll be going with a lot of “cool” assembly this weekend. Wraps and salads of the likes…

  6. I try to avoid the appliances, but my cravings usually win out, haha. Addicted to sweet potatoes, and can’t stand cooking them in the microwave. I never do it right!

  8. YUM. I was just eating my best-ever tuna wrap to date (yes, I do believe it was the BEST EVER) and thought to myself, hmm I should try chicken salad again soon. And then I read your post, ha! I’m a huge fan of using greek yogurt instead of mayo and it tastes even BETTER IMHO. I’m totally making a version of this next week for lunch, I love putting chopped apples and grapes in mine!

  9. I LOVE chicken salad! My go-to recipe is leftover grilled chicken, pulled apart and shredded, apple chunks, dill relish, walnuts, 2% Fage (plain) and a splash of lime juice. Love.

  11. I’m loving all these salads you’re making! I actually do use my oven quite a bit during the summer haha. My place never gets too hot and if it does, I’ll just go outside until everything is done baking

  13. When it’s this hot out I definitely stay clear of anything that emits even a small amount of heat. I love chicken salad but rarely buy it when out to eat because I don’t really like all the mayo.

    This chicken salad sounds good! I wonder if all greek yogurt would work (vs. mayo…I am not a mayo fan at all…). Perfect summer dinner

  19. I bake way more often than I cook, but if there’s AC on in the house, I have no problem using the oven! I just love baking in any weather :)
