What Am I Gonna Do with This Thing??


My mom bought me a watermelon this weekend, and it sat on my counter for a full two days. I’ve never chopped up a watermelon, and quite frankly, I was intimidated.


What do you do when you don’t know how to do something?


Why, turn to Google of course!

I went with this method, and proceeded to first chop off the top and bottom, stand it up and slice it down the middle, and then slice those pieces down the middle, and so on, until I had myself a crapton of watermelon:


I quickly realized I probably should have only sliced up one half, and then put the other half in the fridge, because I have no idea what I’m going to do with all this watermelon.



One way? Serve a decent sized hunk of it as a side with dinner!


Last night I cranked the oven up to 435 degrees, and then put in some Alexia potato wedges, broccoli & cauliflower, and some seasoned salmon to bake away.



The salmon was my favorite! Shane and I both agreed it was (pre)seasoned perfectly Smile

This Morning

I’m currently robe-blogging, trying to decide what my morning plans will be. I have the morning off today, and I’m not quite sure what’s on the workout front for the day (if there is one…I may continue my rest.) Options are:

  • Body attack, which I’m a bit nervous about. I’ve only taken it once, and it was with a friend.
  • Run/walk with Niko
  • Rest

Feeling so indecisive today…

For now I’ll just continue drinking my coffee.


I’ve grown rather attached to my Keurig. Well, Shane’s Keurig. When we he first got it, we kept our regular coffee maker, because I couldn’t fathom not using. Then it broke, and well, now I couldn’t imagine going back!

I recently picked up the My K-Cup, a refillable cup you can put your own coffee grounds in, and I’ve been loving that. I actually have a little recipe/trick that I have to show you, but more on that in another post Winking smile

Ohhh yeah. I’m in love! Except yesterday all day I wore what I’m wearing in the tuesday trainer video, plus I wore a jacket that matched the color of my shoes. I instantly regretted it when I was told I looked like an Easter egg multiple times.

I still love my shoes.

  1. Wish I could help you on the watermelon front. I actually can’t stand it. I’ve tried b/c it always seems like it’d be super refreshing. I’ve seen a few salads that use watermelon and feta. Maybe try that out?

  2. Those are actually the two reasons I never buy watermelon, I hating cutting it up and there is always too much for us to eat it all!

  9. That’s a TON of yummy looking watermelon! I once had a watermelon “salad” w/ mint, feta, cubed watermelon & walnuts. Something different and pretty tasty!

  11. Wow, I am SHOCKED that you’ve never cut up a watermelon! We probably go through a melon a week in the summertime. I usually go for the slice into big circles and then wedges so you can eat it with your hands and get all drippy and sticky!

  12. I had a delish salad with watermelon last summer. Arugula, watermelon chunks, and feta. The dressing was a light white wine vinegrette. Such a refereshing summer salad.

  13. haha that is quite the watermelon!! i love watermelon. i usually just chop it up and stick it in the fridge to snack on it throughout the week and pack it in lunches.

  15. I love watermelon! I can’t wait to get our first one of the season. Both my girls love it too. Between the 4 of us, we can easily polish off an entire watermelon in just 3 or 4 days.

    I have the My K-cup refillable K-cup too. Every time I try to use it, it always overflows out of the front of the machine. I have tried putting in less coffee and it still does it. Any tips or tricks you can share? K-cups get expensive!

  16. You should make watermelon Popsicles! My grandma used to make them with fresh basil in them…. Amazing!

    • I have one of (my four) containers in the freezer now! Not sure what I’ll do with it…probably a smoothie :o) Basil sounds like a fabulous addition!

  17. Haha, love all the watermelon you have. No ideas over here though because I can’t stand watermelon for some reason. I’m not a melon girl. I really need to buy a coffee maker, because all my money goes to starbucks. I can’t even imagine all the money I would save if I just invested in a good one!

  18. We love, love, love watermelon! We usually chop it all into little squares and store in containers. Then when you want some, you just spoon some into a bowl. I think I probably eat too much, but it’s just that good!

  19. When I was younger I used to eat entire watermelons for bfast. It was always saturday morning cartoons and bowls upon bowls of watermelon.
    The real reason this stopped was because when I got older my mom stopped cutting it for me. I literally would still beg for it in college and she refused. Pre-chopped melon is too expensive….
