Naked Toes and Thai Feasts
Happy St. Patrick’s Day! (That’s a leprechaun…not an alien, shh.) Any big plans to celebrate? I think Shane and I are going to don some green, go out for a round or two of green beers, and maybe get some stereotypical Irish food. I was going to make something festive, but I don’t think I’ll have enough time…
I meant to log on and blog again yesterday, but the day completely got away from me! And a good day it was
After training a client, and getting a 4 mile run in, I came home, cleaned up, got ready, and headed out. Not having time for a sit-down breakfast, I made breakfast to go:
Smoothie! Shocker, I know
This one was my normal one with a scoop of instant coffee: 1 c. almond milk, 1 scoop pp, 1 tbsp. cocoa powder, chia seeds, the gums, salt, cinnamon, stevia/ spinach, frozen banana, cup of ice.
And if the instant coffee didn’t deliver enough caffeine buzz, I also grabbed one of the new Starbuck’s Refreshers to go.
They’re made of green coffee beans, and taste fruity. My client didn’t like them so she gave them to me! I like them pretty well, but the sugar content is a little high (Around 16 g?)
Anyway, I was on my way to meet up with my mom, dad, aunt, uncle, and cousin over at my parents’ house. But first, I had to make a stop half way and pick up drugged up doggie:

yestermorning yesterday morning? Well, when I picked her up, apparently the sedative hadn’t completely worn off and she was walking all wobbly and had squinty eyes. Poor pup!
Once I got to my parents’ house, I left Niko with my dad, and the girls headed off to get pedicures:
I never felt like I needed one more! This whole week I’ve been ashamed to wear sandals because I needed a pedicure so badly. Well I can tell you now my toesies will be naked this week! Good thing, because this fabulous weather is supposed to continue
After a few hours back at my parents’ house visiting with everyone, I headed back home to wait for Shane. He had been helping a friend move, and had couple hours to go still.
While I waited, I cleaned and then decided to read one of my Food Network Magazine.
One minute, I’m kicked back reading, the next minute, I’m at the stove making a Thai feast!
I guess reading FNW magazine will do that to ya I ended up making Shrimp and Eggplant Red Curry with Riced Cauliflower:
I had a craving for my usual Thai dish at our favorite restaurant, and this was my go at a recreation of it. It. was. spectacular! I was honestly quite impressed with myself.
I’ll share the recipe soon!
