Well today’s been a productive little Sunday! And good thing, because up until now, productivity has been MIA this weekend ![]()
To do: brainstorm/recipe development for a new freelance assignment, make this week’s meal plan.
To done: ran 3.5 miles, cleaned house, finished laundry, grocery shopped for ingredients for said freelance assignment, and ordered new business cards.
About that last to done – Back in December, I ordered a boatload of them because I’d run out. I restocked some of them at the gym I do some of my personal training at, and then didn’t think about it again. Well, the owner of the gym told me he’d handed out my last business card the other day and I should probably bring some more in. This was two weeks ago and I still cannot find where I put the rest of the cards. During these two weeks I have been an absolute crazy person checking every single place I would have thought to put them. I have no idea. Then I finally gave up and went to go re-order my last order from Kinkos. Turns out, I don’t have any record of ever ordering these cards. None.
So, today I threw my hands up. I gave up. I re-designed and re-ordered them, convinced I’m a crazy person. Seriously…I know I didn’t imagine those business cards. At least I had a coupon this time? ![]()
Anyway, the rest of the day will be spent in the kitchen, hopefully cranking out some good recipes. I’ve already made a pretty decent mess in the kitchen dent in the progress, so here’s hoping I don’t burn out in the next couple hours…
I’ve already had several trial and errors, so we’ll see!
Since I was already in the kitchen, I went ahead and tried my hand at a new granola recipe. Thankfully, it was a hit the first try, and it’s based off of my super simple granola recipe.![]()

{Super Simple} Honey Roasted Peanut Granola
4 c. oats
2 c. roasted peanuts
1/3 c. brown sugar
1 tsp. sea salt
2 tbsp. cinnamon
2 c. chopped dried fruit
3/4 c. honey
1/4 c. creamy peanut butter
1 tsp. vanilla extract
Preheat the oven to 300 degrees. Add the dry ingredients in a large bowl and stir to combine. Then add the rest of the ingredients, and toss to coat. Spread the granola out on one very large or two large, greased pans, and cook for 50-60 minutes, stirring every 20 minutes.![]()
Lunch
Believe it or not, I managed not to eat my weight in granola and other goodies while cooking/baking. In between when I got the munchies I made a quick lunch:
warm grapefruit quinoa salad. I made a big batch of it for week day lunches this week – something I rarely do – and it looked so good it became a week-end lunch!

YUM! I LOVE granola. I’m like you and have to be careful around it – could totally eat a pound in one sitting.
Dude, this whole post made me feel so unproductive! Man, I didn’t do shit today! Sunday tends to have that effect on me.
That granola may be simple, but it requires me to get off that couch and thats hard to so on a Sunday.
