Today’s going to be a great day! Not only is it my birthday…but it’s my golden birthday. And, 27 is my absolute favorite number.
Some 27 factoids:
- My street address was 27 growing up
- My favorite channel growing up (Nickelodeon, duh) was on channel 27
- I was born on March 27th
- I was married on September 27th (which I may or may not have chosen that date because of the number 27)
Yep, 27 and I are pretty tight. I’m going to try and hone in on 27 today and make it a 27 themed day. Ready for it?
I set my alarm this morning even though I never use an alarm – and I woke up before the alarm went off.
This also provided me with enough time into the gym for a couple hours, including training a client as well as getting in a workout for myself.
Today’s workout was cardio in the form of a treadmill workout. My lower body is pretty sore from yesterday’s workout, so I did about half running, half walking with an incline. It looked a lil’ something like this:
Waffles sounded good, so waffles is what I had:

Time: 5-10 minutes
3/4 c. almond flour/meal
1/2 tsp. sea salt
1/2 tsp. baking soda
cinnamon and stevia to taste
3 tbsp. almond milk
1 tsp. vanilla extract
Turn on your waffle iron. Mix together the dry ingredients, and then add in the wet. Spray the waffle iron with some olive oil spray, and then pour the batter into the waffle maker and cook until done. Top with whatever you’d normally top your waffles with.
On top, I dolloped out some of my favorite cottage cheese, raspberries, and some pure maple syrup. Delicious, but so filling, too! A waffle breakfast is birthday enough for me! And I wasn’t about to eat 27 waffles…or stick a candle in the middle
