I try to limit my grocery shopping to once a week (and under $100) but every now and then I have to make a mid-week stop for absolute necessities.
Today was one of those days:
There are some grocery items that we have to have in the house at all times, and today I realized we were out of the following:
- Coffee creamer
- Ice cream (Shane needs it more than I do…but only slightly more )
Plus I picked up some diced tomatoes and salsa for tonight’s dinner. Other grocery store items we must have in the house at all times include: milk, Greek yogurt, bananas, raw nuts, coffee beans, and peanut butter.
Gotta have it!!
I picked up some salsa at the store, too, because on tonight’s meal plan is fish tacos!
When I got home from work, I thawed out a few tilapia fillets, and then rubbed them in a rub of Mrs. Dash + cumin, and fried them up in a skillet.
Then I topped them with the most amazing sauce ever – which is a sweet and sour yogurt-based sauce. The only changes I made was using Greek yogurt instead of sour cream. I also added aforementioned salsa and some lettuce. The entire recipe is loosely based on this one.
I’m always at a loss of what to serve for a side when we have tacos – of any variety – and such was the case tonight. An idea came to me when I saw a can of pinto beans in the lazy susan. I mashed up the drained and rinsed pintos, added cheese, and heated it up in the microwave.
Easy peasy! This dinner is SO good and takes literally 15 minutes to prepare and cook. I don’t know why I don’t make it more often.
Not sure what’s on tap for the rest of the night. We’ve run out of shows to watch now that we’re caught up with Dexter and The Walking Dead.

Mike is 9 years older than me, and he’s the best big brother out there! nd He’s actually adopted. It never seemed odd to me (or to him I think) that he was adopted. In fact, I think it’s odd when people are surprised/act like it’s a big deal when I tell him he’s adopted.
He’s always been the best big brother to me. Well, except for that one Christmas when we were little and he put coal in my stocking (true story)…
