Christmas Rice Crispy Cookies + Auto Accountability
Boy do I have a yummy Christmas cookie recipe for you today!
Each day this week, I’ll be featuring one of the Christmas cookies/candy I made this weekend, and will post the recipe (or link if it’s not mine.)
Since I’m way too impatient to save the best for last, I’m posting about it today – right now, in fact!
I love a soft, chew cookie, but wanted the satisfaction of a good crunch too. So I came up with these Christmas Rice Crispy Cookies.
Unfortunately the first batch was a bust, but I altered the flour and b. soda (I always underestimate!) amounts a bit and now they’re perfect! Chewy – with the crunch from the crispies.
Christmas Rice Krispie Cookies
1 stick unsalted butter, softened
1 tsp. vanilla extract
3/4 c. brown sugar
1 1/2 c. flour
1/2 c. oats
1/2 c. brown rice krispies (I used Uncle Sam brand)
3/4 tsp. baking soda
1/4 tsp. baking powder
handful m&m’s (~half cup)
handful chocolate chips
Preheat oven to 350 degrees. In a mixer, beat the butter, egg, extract, and sugar. Gradually stir in the rest of the ingredients. It might look a bit dry, but keep stirring until a dough forms. Roll the dough into rounded tablespoonfuls onto a parchment paper-lined baking sheet. Bake for 8-10 minutes.
This morning I got my butt to the gym for a spin class! I didn’t have my usual client beforehand, so it made it a lot easier for my willpower to go since I had the extra time.
In fact, I got there a little early and did this lower body workout
Warm up: walking lunches, sit squat to stands, quad pulls, glute pulls, then
- Sumo deadlift – 8x7x6x5 (increasing in weight each set)
- Overhead squat –6x6x6x6 (staying the same each set)
and straight set:
- Romanian deadlift – 8x7x7x6 (increasing in weight each set)
Burn, baby, burn!
I have to admit, I was tempted to go home at this point. Luckily, I saw Julie, my spin instructor, on Saturday and told her I was making it to her class on Monday. Gotta love that accountability
Once home, I was famished. As soon as I got out of the shower, I devoured this breakfast:
2 eggs + cheese, kale, all cooked in a little organic butter. This was yummy, but a freezer cookie was calling my name, heh. That freezer trick does not work, for the record! I grabbed one for later, but settled on a couple cuties for now.
Anyway, now the office is calling my name, booo. At least it’s a short week this week

How do you hold yourself accountable when making it to the gym? Sometimes the blog even holds me accountable! My mom also attends RPM classes – but in another city, so if we talk and tell each other we’ll both be spinning it out the next morning, I’m more likely to make it.
