Mystery Lunch

Well, I was pretty productive this morning! Not.

Instead of getting all my Quickbooks work done, I spent nearly an hour registering and signing up for Live! with Kelly’s Spa-la-la-la-la giveaway.

Have I mentioned my love for Live with Regis and Kelly! before?? I’ve watched it since 2004 (when I can) and lately my schedule allows me to watch it – or at least have it on a nearby television. What I love even more? When NPH is a co-host:

Ohhh yeah Winking smile Anyway, my efforts were fruitless because I need a scanner and a scanner I do not have. I’ll find one though. Then I’ll be entered to be selected to win a spa getaway and I’ll win! Just you wait and see! Party smile


Eventually I had to get productive and go into the office to get some work done. After a little work at the ol’ desk, I broke for lunch:


I forgot to give the details on yesterday’s mystery lunch! Luckily, it’s what I’m having again today, so I can show you 😉 This one is kiiiinda off the wall, guys. Beware 😉

Remember when I made cauliflower crust pizza this past weekend? Well I ended up “ricing” the entire head of cauliflower, which gave me about 2 more cups than I needed. So after cooking it, I just set it aside in some Tupperware for later.

Enter: later

I decided to use the riced cauliflower as just that – rice, and then added this “sauce:”

Aldi’s roasted red pepper and tomato soup makes delicious tasting sauce! I thought about added regular marinara, but who eats marinara with rice? Roasted red pepper and tomato soup totally makes more sense 😉


Then I added the tofu on top (I grilled a big batch on Sunday) for protein.

What’s your favorite sauce? I love peanut sauce, but I very rarely eat it! I also love me some honey mustard :)

    I also loved Reg and Kel. They were my favorite thing to watch in the morning before class when I was in college. My roommate and I would also dvr it if we had conflicting class schedules… ha ha

  5. I totally thought that was buffalo sauce at first. I was impressed by how much heat you can take. 😉 I love using cauliflower like that! It’s a much more versatile veggie than people think.

    • Ha! I like it spicey, but I don’t think I could handle that 😉

      And you’re right! It’s so versatile! I didn’t even realize it up until a couple weeks ago. Still need to try that mashed cauliflower, though…
