Well, I was pretty productive this morning! Not.
Instead of getting all my Quickbooks work done, I spent nearly an hour registering and signing up for Live! with Kelly’s Spa-la-la-la-la giveaway.

Regis and Kelly! before?? I’ve watched it since 2004 (when I can) and lately my schedule allows me to watch it – or at least have it on a nearby television. What I love even more? When NPH is a co-host:
Ohhh yeah Anyway, my efforts were fruitless because I need a scanner and a scanner I do not have. I’ll find one though. Then I’ll be entered to be selected to win a spa getaway and I’ll win! Just you wait and see!
Eventually I had to get productive and go into the office to get some work done. After a little work at the ol’ desk, I broke for lunch:

Remember when I made cauliflower crust pizza this past weekend? Well I ended up “ricing” the entire head of cauliflower, which gave me about 2 more cups than I needed. So after cooking it, I just set it aside in some Tupperware for later.
I decided to use the riced cauliflower as just that – rice, and then added this “sauce:”
Aldi’s roasted red pepper and tomato soup makes delicious tasting sauce! I thought about added regular marinara, but who eats marinara with rice? Roasted red pepper and tomato soup totally makes more sense 😉
Then I added the tofu on top (I grilled a big batch on Sunday) for protein.
