Mexican Red Beans and Rice Bowls

To be honest, I was somewhat at a loss on what to cook for dinner tonight! I had to run and train two clients during the prime dinner hours (at least in our house) so I knew I wanted it to be speedy.

So…I stood in front of the fridge with the door wide open for about 5 minutes before I went back to the recipe archives in the blog for inspiration. I happened upon this recipe, and used what I had on hand to make some Mexican red beans and rice bowls.

The star of the show were these jalapenos from Trader Joe’s – they really kicked up the heat!


I love making these rice bowls because they’re so easy to substitute ingredients. Don’t have jalapenos? Use bell peppers and add some cayenne. No red beans? Go for black!

I made our rice bowls with brussells on the side:


And then added mounds of cheese:


Well, cheese to the rice and beans and nutritional yeast to the brussels. I love NY on brussels sprouts!

No matter what spin I put on this old favorite, Shane and I always seem to enjoy it, and tonight was no different. We both loved it!

Mexican Red Beans and Rice

1 c.  brown rice
T tbsp. olive oil
2 jalapeno peppers, chopped
1 can red kidney beans, rinsed and drained
1 can fire roasted diced tomatoes, NOT drained
1/2 tbsp. cumin
1/2 tbsp. chili powder
1 tsp. salt
Shredded cheese and avocado for toppers

Cook rice as directed. Meanwhile, heat up the oil in a pan, and cook the jalapeno peppers for about 2-3 minutes. Add the beans, tomatoes, and spices. Bring to a boil, add the cooked rice, and cover, cooking on simmer for an additional 10 minutes. Top with avocado and cheese.


It’s so easy – and healthy -  but the creamy cheese and spices to me scream comfort food.

Although it was a busy evening, I was bound and determined to take Niko on a 30 minute walk. It’s been great weather here lately, but I haven’t had time to get her out for a walk, save 5 or 10 minutes here and there. So before I headed to my clients’ houses, I broke out the leash and we power walked around the neighborhood.

It was such a beautiful day that when I also went for an impromptu 4 mile run, too. It got up to 60 degrees, and I think today was the last warm day of the year.

And now I’ve got a piece of cake calling my name. We have WAY too much of it leftover in our fridge.

    • Definitely a pantry meal:)
      I bought mine at my local health food store, but I’m pretty sure you can get it on iHerb for pretty cheap:)
