Butternut Squash Slaw-ful

Shane had class tonight so I took it upon myself to make a dinner at which he’d be sure to turn his nose up. There’s a perfectly fine frozen pizza in the freezer when he gets home!

I honestly wasn’t sure what I’d make with my expanded creativity, but my eyes landed on this:


Both have an expiration date coming up soon…time to put to use! With the broccoli slaw and butternut squash soup, I made butternut slaw!

I started by sautéing half an onion in a little olive oil until soft, and then added the bag of broccoli slaw. Actually, I added some tofu I had leftover to give the dish some protein, and then I added the broccoli slaw – and cooked for about 5 minutes.

When the broccoli slaw was cooked through a bit, I added the sauce soup, and cooked until heated through.

How easy peasy does that sound?! Sounds too easy, right…?



Right Sad smile It was…ready for it? Slawful.

Here’s what I wanted to say: “It tasted delicious, too! Slightly sweet and perfectly nutty, with a hearty crunch from the broccoli slaw. It definitely satisfied the butternut squash soup craving I’d had ever since seeing Lindsay post this morning on her blog, too.”

But here’s what I really say: It was bland, unsatisfying, and I wished I’d had a backup dinner to eat in place of this one. At least it had one saving grace…

Dessert, which was one of these cookies, was delicious!


I stopped myself at one because I realized there were only three. cookies. left from yesterday’s batch. Granted, I did send Shane’s dad home with four yesterday, but that means between Shane and I, we ate 12 cookies in 36 hours. Oof…maybe I shouldn’t have done that math!

Anyway, instead of having yet another cookie, I switched over to one of my old favorites for dessert – a Vitatop!


This is the chocolate banana flavor. I simply toasted it and put on a schmear of almond butter. Although Deep Chocolate is by far my favorite vitatop, I really liked the chocolate banana flavor! You can see other vitatop reviews on RAN here and here.

  2. I do the same thing when my husband has to work late or is out of town – I make something I love that he probably won’t like very much. I’m sorry your’s didn’t turn out so great tonight. :( Oh well, we all have some kitchen fails every once in awhile…

    I’ve only ever had the Deep Chocolate Vitatop and I was surprised at how good it was!! I’m sure I would love the Banana Choco Chip kind too. I don’t buy them hardly ever because they’re a little pricey, but they sure do make for a good little dessert or snack when you’re craving something sweet.

    At least you had the cinnamon bread and yummy dessert to make up for supper :)

  4. Despite the flop–experimenting in the kitchen is always fun! I have to go on an adventure to find some more VitaTops. Haven’t had them since last year. & They hit my constant sweet tooth quite nicely :)

  5. Yum I’ve always wanted to try a Vitatop! They don’t have them here, but I will definitely be buying some when I get home. Sorry your dinner was a bust, but at least you had a tasty looking hunk of cinnabread to go wtih it mmmm :)

    Good thing you made up for it with cinnamon bread and yummy dessert! I should try those Vita tops – I’ve never seen that flavour near me, only the double chocolate which I’m not a fan of.
