Breaking the Fast a Little Later

Usually Fridays FLY by at the speed of light, but this one has been taking its time for a change. It’s only 3:00 pm, but seems like it’s around 5:00. Hey – I’m not complaining Open-mouthed smile

I took an RPM class after training a client this morning, and it was fabulous! It was my first time spinning to the new release, so the change of songs and routines was very much welcomed.

By the time I got home and showered it was nearly 10:00, and I was more than ready for an XL breakfast – featuring Eggs in a [Pepper] Basket!


I can’t get over how cute/tasty/awesome it is to eat my eggs this way. All you do is heat up a griddle with a little oil, slice a pepper, and throw it on for a couple minutes. Then flip it, crack an egg inside, and fry for another couple minutes.


Then I just flipped it again to cook the top side of the egg just slightly. I ate two eggs in a basket alongside a bowlfull of berries and cream porridge:


These, however, were the star of the show:



I picked up these dried strawberries at the farmer’s market last weekend, and they taste SO good cooked in oats. They hydrate back up a little and are so plump and fruity!

Breakfast was pretty large, but I’ve been switching up my breakfast routine a little bit. Lately, when I wake up, I have water, then coffee. Then I’ll mix up some BCAA’s and drink them on the way to the gym and during my workout. So breakfast doesn’t happen until a good 3 or so hours after I’ve been awake. But when it does happen, I straight up feast. I know it’s not a popular breakfast routine in the world of healthy living blogs, but I’m digging it lately.

The rest of the day involved computer work from two different computers – blog upkeep as well as a little BIC work from home:

It’s gorgeous here in central IL today, so when work was done for the day, Shane and I packed up Niko, grabbed a couple coffees, and headed out to the trail for a walk:


It was a nice break, and we had fun just strolling along enjoying the day Smile



We intended on making it a longer walk, but regardless of the shining sun it was a little chilly. OK fine – I was being a wimp and my iced coffee wasn’t helping! Smile with tongue out

Going to get a little bit of cleaning in, and then Shane and I are headed to a happy hour for his team at work. Should be fun! Smile

How soon after waking up do you eat breakfast?

  1. I have breakfast about 3 hours after I get up too. I get up around 530 and if I’m going to the gym I grab a half a banana. I eat my full breakfast at work at 8 or 830.

    • I get up more around 6 these days, but yeah – breakfast doesn’t come until 9:30 or 10:00! The BCAA’s tide me over until then.

  2. Yum, dried strawberries! They’re one of my favorite dried fruits (along with apricots and mango), but I never think to pick them up. Enjoy the nice (although chilly) weather while it lasts- hopefully the trick-or-treaters don’t get rained on. :)

  3. I don’t have it until I get to work. I wake up around 6:30 and eat around 9? I’m usually not hungry before then and I want as much sleep as possible so eating before work is just pointless.

  4. I typically eat breakfast within 30 minutes to an hour of waking up. I usually eat it while Im getting ready for work, so it has very little to do with when Im hungry, its all about convenience. But on the weekends, I go a little longer. Maybe two hours, sometimes more.

  5. It depends on the day, if I am working out in the morning it might be 90 mins to 2 hours (or on weekends longer – like 3-4 hours so I have a snack). But most days during the week I eat with 45 minutes of waking up.

  6. Totally depends on the day. I try to eat within the hour, but if I work out (or get distracted) it’s a little later than that. Oops. Hope you have fun at your happy hour! :)

  7. I have never seen anything like your peppers and eggs! love it :) And I eat about 2 hours after I wake up… I am simply not hungry but it works for me

  9. Awww those eggs are so cute. During the workweek, I drink a cup of coffee right when I wake up but I don’t eat breakfast until I get to work, which is about two hours after I wake up.

  10. That is such a good idea with the eggs and peppers! I don’t really have time for that for breakfast during the week, perhaps this week we will have breakfast for dinner to give it a try! I usually eat around 7am as I have to be at school ready to go by 7:45am. If I get up and run, that’s about 2 hours after I wake up. If I don’t run before school, then it’s only about 45 minutes after I wake up.

    PS – those biscuits from Tastefully Simple are super yummy! Taste like Red Lobster’s.

  11. I get so excited for breakfast. It’s usually within 30 to 45 minutes of waking up. And I’m usually coming up with what I want to eat the night before. :-)
