Collard Green Wraps

I didn’t intend on posting again today – I was going to take the rest of the evening off from blogging and ON from cleaning the house. However, I made the most amazingly healthy and delicious lunch today that I just have to share with you guys or I might burst!

After training my last client, I decided to run some errands since I was already out – even though I was starting to get hungry again. So after Fresh Market, Target, and Petco, I was ready to eat everything in sight! Instead, I snacked on some cherries while making a real lunch. At Fresh Market, I picked up some collard greens on a whim, and I wanted to incorporate them into lunch.

I started out by chopping some bell pepper and mushroom, and sauteeing in a little olive oil spray for a couple minutes. Then, I added half a can of pinto beans, some TJ’s Everyday Seasoning, sea salt, and about 3 tbsp of lime juice.

Once they were all about ready, I busted out my ginormous collard green leaf:

It’s seriously as big as my arm!

To soften it, after rinsing, I just draped each side over the pan of veggies that were cooking.

Next, tear off one side of the leaf (I’m just calling it a leaf because that’s what it looks like – one giant leaf! lol) and place it flat on the plate.

Fill’er up, and then just wrap it like a tortilla!

I had two – and they were SO yummy and FRESH tasting!

Pinto Bean and Veggie Collard Green Wraps

3/4 chopped bell pepper

1/2. c. chopped mushroom

3/4 c. pinto beans

sea salt, pepper, cumin

2-3 tbsp lime juice

1 collard green leaf

goat cheese crumbles

Sautee the bell pepper in some olive oil spray in a pan over medium heat. After a couple minutes, add the mushroom, and then the beans and the seasoning. While everyone’s still cookin’, take your collard green leaf and lay it over the veggie mixture for about a minute per side, just enough to warm and soften. Tear off one side of the leaf, and fill with the veggie mixture. Top with goat cheese, and wrap it up like a burrito.

I also got my long run in today! I ended up doing 8 miles before calling it quits. Then I realized the half marathon is two weeks from today and I haven’t done a single double digit long run yet. Oops… Smile

Despite running 8 miles, it feels like I’ve had endless energy! As far as cleaning goes, I’ve already dusted, vacuumed, and swiffered! Time to finish up before I run out of batteries Winking smile

Have you ever had a collard green or lettuce wrap? This was my first time! I usually prefer my wraps to have more carbs in them, but this way was fun!

  2. Yum, I love lettuce wraps! We usually make tuna ones with hummus or mmm sauce from Peas and Thank You. They are a change from regular wraps :)

  6. Those do look good! Never had collard leaves but lettuce wraps, yes! Imade incredible crab salad lettuce cups a while ago. They were amazing!

  9. I actually prefer lettuce wraps to wraps with tortillas…for some reason I only like tortillas with my Mexican food even though I’m a carb fiend!
