Simplest Scallops

The other day was grocery day, and I realized I’d already gone over my monthly grocery budget for April. So instead of going to Fresh Market and Meijer like usual, I went to Aldi and Wal-Mart. And I brought Shane with me. You know, just in case.

Don’t underestimate the power of Aldi, my friends! Did you know that the creators of Trader Joe are also the creators of Aldi?!

It’s true. Check out  the products in both stores– you can totally see the resemblance. Obviously TJ’s is higher quality, but still.

Have you ever shopped at Aldi? What’s your opinion on it?

Anyway, back to my grocery trip.

After reading your comments and helpful tips regarding fish, one kind reader suggested checking out the frozen section in Aldi – and I’m so glad she did! I found frozen wild caught salmon and frozen wild caught scallops! Although the scallops were still pricey for Aldi, ($7.99) Shane told me scallops used to be his favorite.

Challenge. Accepted.

I, Paige, will cook scallops and they shall be delicious!

Garlic Baked Scallops

Half a box of whole wheat spaghetti

1 lb. bag of frozen scallops, thawed over night

3 tbsp butter

1 tsp garlic powder garlic powder

1 tsp sea salt

1/2 tsp pepper

1 tsp paprika

1/4 c. parmesan cheese, grated

1 c. bread crumbs

juice of 1/2 a lemon

Preheat an oven to 375 degrees. In a deep casserole dish, arrange the scallops on the surface. Cut the butter into 5ths, and place all around the bottom of the dish with the scallops. In a small bowl, combine the rest of the ingredients. Pour evenly onto the scallops. Finally, squeeze the lemon juice on top of the mixture. Bake in the oven for 15-18 minutes. Cook spaghetti as directed. Squeeze additional lemon juice over top, if desired.

edited to add: I forgot to let you guys know the scallops were STAND UP scallops. TDF (to die for!) :) Challenge successful!

  1. I shop there on a weekly basis. Our Aldi has great produce and, like you said, a big selection of wild caught seafood. I’m always up for saving on my grocery bill.

  2. Your scallop dish looks great! We usually buy the large scallops from Costco’s weekend seafood counter. I like to just pan sear them with a bit of white wine, olive oil, fresh garlic, s&p and whatever spices you may be in the mood for. Love scallops!

  5. I made scallops once for my husband and he actually really liked them. I believe I cooked them in a pan and made a white wine caper sauce to go over the top.

    I was surprised at how easy they were to make!

  6. I occasionally go to Aldi when I’ve got a massive baking weekend (ie Christmas) coming up or something of that nature. Their pantry goods are too cheap not to take advantage of…

  7. I’ve never been to Aldi, but any store owned by the TJs folks is ok with me! I’ve made scallops I few times- mostly I’ve pan seared them. I find them tough to get jussssssssst right. Josh enjoys them, but I’m just not a huge fan. I may have to make this dish for him though!!

  8. I had no idea that Aldi and TJ’s were “related”! I’ve never been to Aldi, even though there’s one here…AND we’re getting a TJ’s about 45-minutes away in the fall. I can not wait!

    I love scallops and often cook them in the summer. I usually pan sear them, but your technique looks simple and delicious!

  11. Those scallops look delish. I have some in our freezer that need to be eaten. Tonight sounds like a good night for that! (They were BOGO last week at the grocery store, yay!)

    I recently started eating frozen seafood.. It’s pretty good, and a helluva lot cheaper than the fresh stuff. (unless we catch it ourselves)

    I have shopped at Aldi’s.once. and that was it. It drove me crazy. and we moved and the closest one is not close at all. I can’t stand walmart, i’m currently not spending my money there for anything. So I shop @ publix. Our target isn’t a super duper target. It has some frozen stuff, and some canned stuff but no fresh anything.so sad.

  12. I have been into Aldi once or twice but each time I went in I looked around and determined that I would rather go somewhere else. Luckily for me I have always been able to shop at stores like Jewel Osco, Schnucks, Meijer, and Walmart.
