No Bake Protein Bar Recipe
Ooooeee! I am feeling that power yoga class I took yesterday morning. It’s been a while, and I am definitely sore in all the right places!
Aside from yoga and the grocery store, I spent my Saturday indoors.
Look at it out there! Cold, rainy, windy. Prime conditions for making a mess in the kitchen 😀
Doesn’t your kitchen just call out to you on rainy Saturdays? Well, the kitchen and the couch 😛 I chose the kitchen yesterday. I ended up making three different goodies, but today I’ll share with you my favorite of the three.
You see, Shane and I had just finished off Jenna’s Double Banana Chocolate Chip bars the day before. It took us approximately five days to do so. They were that good. I had all intentions of making them up again right away, but then I got another idea.
They were yummy, and semi-but-not-really good for you. So I decided I’d use the recipe as an inspiration for protein bars!
No Bake Double Banana Chocolate Chip Protein Bars
inspired by Jenna’s bars
2 c. quick cook oats
1/2 tsp sea salt
~60 grams vanilla flavored protein powder
1 large very ripe banana
1/2 c. raw almond butter (or whatever you have on hand…)
2 tbsp. canola oil
1/4 c. honey
1 tsp. vanilla
1 tbsp flaxmeal
In a large bowl, combine the oats, sea salt, and protein powder. In a smaller bowl, combine the rest of the ingredients. Add the wet to the dry and combine. Keep combining. Put some elbow grease it in it! Line a small cookie sheet with parchment paper and flatten it in there. Put in freezer for a couple hours, and cut with a pizza cutter into bars. Store in the freezer in an airtight container.

1. While flattening the dough in the cookie sheet, things can get sticky. I like to enlist help in the form of spray canola oil.
Spray onto your hands and then flatten out with your hands – and the dough won’t stick all over your hands!
2. Your dough will look like this when it’s ready. Don’t give up – keep stirring!
3. Store in an air tight container in the freezer, with parchment paper in between each layer of bars.

Well I’m off to get ready for a run and then train a client. It looks warm out right now, but looks can be deceiving – it only feels like 33 degrees out! Looks like it’ll be another treadmill run. Speaking of treadmill runs – I ran Friday’s 11 miler on the treadmill. Yes, it was as boring as it sounds!!
