Coco Loco

While on vacation in Punta Cana, Shane and I took advantage of the all-inclusive beverage selection. After trying out a few different concoctions, we each developed a couple “usuals.” One was refreshing (gin + club soda w/ lime) and one was decadent: the coco loco.

Ohhhh, the coco loco. The pure tasty decadence alone made it hard to ignore the insane amount of calories they could fit in an 8 ounce glass, so we tried to limit them. One during the day, and then maybe one again after dinner. Hey, that’s moderation when you’re on vacation :-P

Loco for coco locos!!!

Obviously, this was a drink I’d be sure to replicate at home. And this Saturday, that’s exactly what I did.

Coco Loco

serves 2

1 c. coconut water

1/2 can (about 1/2 c) of real cream of coconut

3 oz rum (optional)

Handful of ice

Dash of cinnamon

Place the first two ingredients + 1 ice cube into the blender and blend. Add the ice cubes one by one until the desired consistency is reached.

  8. My favorite fruity drink is a raspberry-lime rickey. So delicious. That looks good. I’ve never had a drink with coconut in it before.
