While on vacation in Punta Cana, Shane and I took advantage of the all-inclusive beverage selection. After trying out a few different concoctions, we each developed a couple “usuals.” One was refreshing (gin + club soda w/ lime) and one was decadent: the coco loco.
Ohhhh, the coco loco. The pure tasty decadence alone made it hard to ignore the insane amount of calories they could fit in an 8 ounce glass, so we tried to limit them. One during the day, and then maybe one again after dinner. Hey, that’s moderation when you’re on vacation

Loco for coco locos!!!
Obviously, this was a drink I’d be sure to replicate at home. And this Saturday, that’s exactly what I did.
Coco Loco
serves 2
1 c. coconut water
1/2 can (about 1/2 c) of real cream of coconut
3 oz rum (optional)
Handful of ice
Dash of cinnamon
Place the first two ingredients + 1 ice cube into the blender and blend. Add the ice cubes one by one until the desired consistency is reached.

Mmmmm…nothing like a frosty, tropical drink to bring back the vacation memories! My favorite would have to be the daiquiri. Sweet and delicious!
My favorite fruity drink is a raspberry-lime rickey. So delicious. That looks good. I’ve never had a drink with coconut in it before.
