Flourless Double Chocolate Chip Cookies

Yesterday seemed to pass in a flash! Before I knew it, it was 5:00 – where did the day go?! Then I started watching the Superbowl, and minutes passed like hours, but then again I also referred to this superbowl as the who-cares-bowl (sorry Packers and Steelers fans!!)

Anyway, after I finished posting, I stepped into the kitchen with one goal in mind: produce some delicious chocolate chip cookies that those who are gluten-free, like my BFF Kim, can enjoy.

I was also out of flour, so it only seemed appropriate.

So I did some research on what to use when making cookies without flour. I’d only done this one other time before, but those cookies involved almond butter, and I wanted the main focus of these cookies to be chocolate, chocolate, chocolate!

The answer? Egg whites! They make your pre-baked cookies look like this…

But then when you pop them in the oven, something magical happens and they turn out like this!

Although it took me two attempts to get a good batch of cookies (the first batch was an epic disaster,) it was definitely worth it!

Flourless Double Chocolate Chip Cookies

adapted from Epicurious

4 egg whites

1/2 tsp salt

3/4 c. confectioner’s sugar

1 scant c. dutch pressed cocoa powder

1 tsp vanilla extract

3/4 c. dark chocolate chips

1/4 c. unsweetened coconut

Preheat the oven to 350 degrees. In a mixing bowl, mix together the sugar, cocoa powder, and salt. Add the egg whites, one by one, continuing to beat the mixture with an electric mixer until the batter thickens slightly. The dough will somewhat resemble a mousse. Add chocolate chips and coconut and mix some more. Drop tablespoon size “balls” onto a parchment lined baking sheet, and bake for 10-12 minutes.

Devour!

This time spent in the kitchen yesterday definitely doubled as therapy ;) And I didn’t stop here! Another gluten-free product was produced (one of my faves!) but we’ll save that one for later :)

  8. That’s ok about the “who cares super bowl” comment. I never cared or watched in previous years either. I guess the only people who really care are the die hard football fans or the fans from those states that were playing.

    I am looking forward to a vacation in Florida this week–in fact, it’s all I can think about while I am at work today. Can’t wait to get away from work (and the snow) and spend quality time with my husband in a beautiful and warm place.
