Yesterday was the kind of day where I probably should have turned off my alarm and not gotten out of bed.
It was the kind of day where I really wasn’t in the mood to, well…anything.
The kind of day where everything was an annoyance. Heck, even I annoyed myself!
It was a mug brownie kind of day
A couple years ago, when the office I worked in was dominated by the female gender, there was an email sent around with some pretty spectacular content: a recipe for a microwave brownie for one…in a mug!
The pictures don’t do it justice, friends. Don’t let the bad lighting fool you. People don’t exactly make mug brownies when there’s natural light pouring through the window.
Anyway, ever since then, when I have a really fierce chocolate craving and know I don’t stand a chance against an entire pan of brownies in the house, I turn to this recipe.
4 tbsp all purpose flour
3-4 tbsp cane sugar
2 tbsp unsweetened cocoa powder (or chocolate protein powder for a little extra protein!)
1/4 tsp sea salt
2 tbsp canola oil
2 tbsp water
1 tsp vanilla extract
2 tbsp dark chocolate chips
In a small bowl, whisk together all of the dry ingredients; set aside. In the mug, mix the rest of the ingredients besides the chocolate chips. Add the dry ingredients and mix until combined. Add in the chocolate chips and microwave for about a minute, maybe a few seconds more, depending on the power of your microwave. Let cool
