A Mug Brownie Kind of Day

Yesterday was the kind of day where I probably should have turned off my alarm and not gotten out of bed.

It was the kind of day where I really wasn’t in the mood to, well…anything.

The kind of day where everything was an annoyance. Heck, even I annoyed myself!

It was a mug brownie kind of day 😉


A couple years ago, when the office I worked in was dominated by the female gender, there was an email sent around with some pretty spectacular content: a recipe for a microwave brownie for one…in a mug!


The pictures don’t do it justice, friends. Don’t let the bad lighting fool you. People don’t exactly make mug brownies when there’s natural light pouring through the window.

Anyway, ever since then, when I have a really fierce chocolate craving and know I don’t stand a chance against an entire pan of brownies in the house, I turn to this recipe.

Mug Brownie

4 tbsp all purpose flour

3-4 tbsp cane sugar

2 tbsp unsweetened cocoa powder (or chocolate protein powder for a little extra protein!)

1/4 tsp sea salt

2 tbsp canola oil

2 tbsp water

1 tsp vanilla extract

2 tbsp dark chocolate chips

In a small bowl, whisk together all of the dry ingredients; set aside. In the mug, mix the rest of the ingredients besides the chocolate chips. Add the dry ingredients and mix until combined. Add in the chocolate chips and microwave for about a minute, maybe a few seconds more, depending on the power of your microwave. Let cool

    Like a mug cupcake with frozen cherries and chocolate, or with a banana. So quick and so comforting!

    • was born and raised in MN, and love it here! My hubby and I have two chridlen 4 & 5 and we’re actually trying to create new traditions, as old ones are seeming to die out a bit as our families on both sides continue to grow. One thing we do continue every year is doing a big cookie baking day with my hubby’s side of the family (coming up this Sunday!). All the ladies (and kids) get together at my mother-in-laws and just bake bake bake all day…and peruse the table full of appetizers and snacks :-) I’ve known my hubby since 2003, so this will be my 10th Christmas with him – and my 10th year of baking with his family!

  13. OMG! I’m craving chocolate right now. I just shamefully went to the vending machine and bought some little amos chocolate chip cookies. I wanted M&Ms, but they wanted a dollar.. no way, cookies are cheaper! That brownie looks amazing!!

    I also have days where I annoy myselt. It’s horrible.
