Bell Peppers Are Back…and Stuffed

When I saw these bell peppers at the store, I knew I had to get them even though they weren’t on the list. I even had a recipe in mind right then and there in the produce section!


Bring on the grains!


These stuffed bell peppers are filling on their own, but not toooo filling. Although the peppers are stuffed, they won’t leave you feeling stuffed. Perfect to enjoy alongside a bowl of homemade vegetable soup (a post for tomorrow 😉 )


Bulgur Stuffed Bell Peppers

1 c. bulgur (or quinoa, or brown rice) *

1 c. vegetable broth, 1 c. water

2 garlic cloves, minced

small handful of fresh basil

salt and pepper

1/2 c. pistachios

1 c. BPA free canned black beans

1/4 c. mozzarella cheese

3 bell peppers, any color, tops sliced off and de-seeded

Combine the water, broth, garlic, basil, and bulgur in a sauce pan over medium high heat. Bring to a boil and then turn down the heat, cover, and simmer for about 10 minutes or until all the liquid is absorbed. Meanwhile, fill the bell peppers with water, set in a bowl, and microwave for 5 minutes. After all of the liquid is absorbed from the bulgur mixture, stir in pistachios, beans, and cheese. Finally, stuff the peppers with the bulgur mixture and devour.

  9. I don’t know about the rest of the country, but in Arizona you can buy packages of 3 bell peppers at the 99 cent store. It’s such a good deal!
