Five Minute Fries to Fuhgettabout Christmas
I’m still in denial that Christmas is over. After the gym this morning, I was still blasting Glee’s Christmas album in my car on the way to Target to score on some post-Christmas deals.
Until next year, pretty paper…
However, I’m pretty sure I’m more than OK with not having a plethora of Christmas cookies in my kitchen. I got cookied out this year!
Anyway, to lessen the sting of the day-after-Christmas-blues, I thought I’d whip up something to make me feel normal again.
What’s this, you ask? Why it’s a jicama!
And what are these you ask? Why, they are fries!
Perhaps the easiest and healthiest fries you’ll ever make. Seriously.
I had mine along side some organic kidney beans topped with homemade cashew butter!
Just be careful while peeling that jicama. It’s a tricky little son of a vegetable!
Do as I say, not as I do.
Five Minute Fries
1 medium sized jicama
1 tsp. EVOO
1/2 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. cumin
1/4 tsp. sea salt
Peel jicama, and cut in half. Chop into 1/2 inch thick strips. Combine the oil and seasonings in a medium sized bowl and add the jicama strips. Toss to coat each strip.
Now, if you’ll excuse me, I’m going to go turn on the Christmas tree lights, and join these two by the fire.
And maybe a Christmas cookie or two…
Do you get day-after-Christmas/holidays-blues? I always feel a little out of sorts after any holiday, but Christmas gets me big time. Mainly because it’s the only thing that makes winter bearable for me! haha

Shane and I are about to head out to get some grocery shopping done and then rent an action packed movie. Shane got a butt-kicker for Christmas and we need to test it out in our theatre! Apparently it actually makes the seat shake from the bass – so you can feel the bass, but it’s not blast-through-the-walls loud. Boys and their toys… haha
