Kickin’ off the Birthday Celebrations
Morning!! How goes it?
Last night after I got home from training a client, the hubski and I kicked off the celebrations for my birthday week! That’s right, I get a whole week, haha 😉 I don’t turn 25 until Saturday, but that’s just how we roll around here.
At first Shane suggested going out for some drinks and appetizers, but then we thought our wallets would like it better if we partied at home.
Shane tended to the drinks and appetizers, while I got the meal started:
Bloody Mary for the hubski and red, red wiiine for the (almost) birthday gal
And just because I looove it so much, our new kitchen table center piece!
And for dinner, I was preparing a delicious and summery salad:
I washed, chopped, and tossed a salad spinner full of romaine and spinach leaves. Then put some chicken (for Shane,) Quorn chik’n (for me,) and some raw cashews in the oven.
While the food baked, we played Uno!
We’ve kind of gotten euchred-out (there is such a thing?!) and I thought Uno would be a nice change of pace. Indeed it was! Especially since I whooped some major boot-tay 😉
After I got done pulverizing the hubski’s Uno game, dinner was ready!
I tossed into the leafy greens some chopped red onions, fresh strawberries, half an avocado, and the cashews:
I left the “meat” products to be thrown on our individual plates since I didn’t want any chicken juice (ew!) on my plate:)
The star of the dressing was this bad boy:
I tossed together about a half a cup of POM juice, 1/4 c. grapeseed oil, 1/2 t. sea salt, 1/2 T. agave, and 1 T. rice vinegar. Whisk all of the ingredients together, and toss with your salad! In hind sight, I would have added 2 T. agave nectar, but we all know I’m a big sweet tooth 😉
The flavas went together woooonderfully!! Seriously the best salad and salad dressing I’ve ever made. I’m a huge fan of fresh, light, and fruity salads, and this salad hit the nail on all of those elements 😀 I’ve never thought of using fruit juice in dressing before, but I have a feeling this one’s going to be a staple dressing of the summer.
Finishedup the celebrations with what else but an episode of 24. And to further celebrate, we had summa dis:

CSN Stores, which sells barstools from allbarstools.com, bakeware from cookware.com, and TONS of other products, has been gracious enough to send me an electric kettle to review. I gotta say, this will make things MUCH speedier in the morning when I’m up at 4:45 and wanting my teapot to boil water before I get my workout on! I’ve never used one, but I’m very intrigued on how many minutes this will give me back in the morning.

Do you celebrate your birthday? Or just look at it as just another day? I tend not to make a huge deal out of it, but I still like to let loose a little more than I usually do (i.e. less productive, more indulgence…exercise pretty much stays the same though.) Besides, I’ll take any reason to celebrate. At the risk of sounding cheesy, we should treat every day as if it were a celebration!
