A Whole Lotta (Enchilada) Love

       Hey hey hey! How ya feelin’ today? I woke up in a surprisingly great mood today for a Monday! It might have had something to do with the fact that I almost got eight hours of sleep last night :D Went to bed around 8:30, read, and was asleep by 9:15! I used to read before bed ALL the time, and it’s a lil tradition I’d like to pick back up.

First lemme back up to Sunday. I’ll make it quick ;)

Didn’t get my long run in due to a side stitch, but I made with due, and got a nice hr and twenty minute workout in w/ some cardio and upper bod weights

Came home and mowed on some grub:

Gah. So freakin’ good.

My parent’s visited for a while and we ran errands all over town before the big Saints vs. Vikings game. Holler! Saints won!

While watching the game, the husband and I played two-handed euchre and munched on some veggies.

Then had a standard Sunday night football dinner. Plus una cerveza :D

Called it a night shortly after that!

 

Work went quite well today! I did, however, wake up with no voice, and still have no voice as I write this post. That was kind of annoying to talk to people on the phone. But not too shabby of a day all in all.

Started it out with a green monster and some over and over and overnight oats!

Love it. Half cup oats, 1 cup almond milk, 1 T brown rice syrup, 1 T chia seeds, 1 T hemp powder, 1 T. flax. On top was sliced nanner, cinnamon, TJ’s raw AB.

When I pulled in the parking lot for work I saw something black and square on the ground. In fact, I almost ran over it. Curious, when I got out of my car, I picked it up, and saw someone had dropped their iPhone! Good thing I found it, because it had been snowing, too.

I did a little stalker work, and found out who it belonged to, then returned it to its rightful owner. :D

The rest of the day sped by! Nothing too eventful to report, but I got a lot of work done, which is always a good thing.

 

But when I left, there were some treacherous road conditions! I didn’t even know it was supposed to snow, but it was snowing sideways because of the heavy, heavy winds, which of course = blowing snow = bad roads. I even had a guy pull out in front of me and then did a 360 because of the snow/ice/slush on the ground! Of course he was in a truck. Is it just me, or do people in trucks think their vehicle is invincible in the snow? Maybe it’s an Illinois thing.

After seeing that, I took my time driving home! Today was a rest day from working out, so I just did a little mopping, some laundry, and kept up with the Kardashian.

But then…it was ENCHILADA time!!!

Using this recipe (which I found indirectly from Gina’s blog) I made veggie enchiladas for me, and chicken enchiladas for Shane!

Inside this blanket of goat cheese, enchilada sauce and Ezekiel tortilla was garlic, onion, red pepper, corn, tomatoes, and more sauce!! Plus some avocado and a side salad of spinach. So freakin’ spicy and delicious it about knocked my head off.

Well Shane just got done kicking my booty in some Wii bowling. So I think I need to go bury my sorrows in The Bachelor. Man…I really make it sound like I watch a crap ton of trashy TV on here don’t I?! Well..I do try to be honest on here, haha ;)

Are you into football this year? If so, who’s your team? Colts or Saints? I’m actual kinda anti-Colts, and I also like the Saints all right (Bear’s are my team, but Saints are second.) Either way I’m not HUGE into football, but it’s fun when it comes down to playoffs and the Super Bowl  – even if your team’s not in it!

If you’re not, what’s one of your favorite books? What are you reading now? My all time favorite is To Kill a Mocking Bird, but I picked up Lovely Bones at Borders yesterday.

  5. I enjoy some TV at night to unwind with. It’s usually on in the background as I’m checking blogs or reading too. ;)

    Right now I am reading “The Weight of Silence” by Heather Gudenkauf. I just started but so far I really like it. I didn’t care too much for the Lovely Bones. How are you liking it?

    And football – love it! Only if its college though ;)

  6. To Kill a Mockingbird is definitely one of my favorites too as is Of Mice and Men. I liked Lovely Bones, but it was strange. I just bought Hunger Games, and if I like it a bunch, I will get the sequel.
    Your cooking looks wonderful as usual. Are you planning to make those choc. covered banana chips again soon? Dad was asking where they all went:-)

  7. Not a Colts or a Saints fan…I’m a Bears fan – so you know I haven’t been rooting for anyone for a while now…ha! I just finished reading The Girl With The Dragon Tattoo which was great…Lovely Bones is SO good…! My all time favorite is Pride and Prejudice though…!

  13. I was into football, but my team (Steelers) have been out of it for a while. I’d love it if the Staints won, but I think the Colts have this one in the bag!

    My all-time favorite book is ‘The Alchemist’ but ‘The Time Traveler’s Wife’ and ‘East of Eden’ are close behind!

  14. I’ve been trying to get through The Time Traveler’s Wife for a long time…I just can’t get into it I guess. I’m a Chargers fan so I’m not too into either the Colts or Saints but I’ll go with the Saints because Reggie Bush was at USC when I was. Go Trojans! :)

  15. I read the Lovely Bones. I thought it was good – definitely an original idea! I didn’t even recognize it with that cover. Its one of my biggest pet peeves when they replace the original book cover with pictures of the actors from the movie!

  17. I have never been brave enough to make homemade enchiladas. For some reason it seems more intense than making other Mexican dishes at home! Your recipe sounds delicious though.
    What is in your veggie wrap/pizza? I am really into wraps lately and that one looks good!

    My husband is a die hard Bears fan, too. I haven’t asked him which team he will be rooting for in the super bowl. He hates the Vikings and Favre which, being in MN, gets interesting! I cheer for the Bears by default, but just like watching football in general.

    • I’m still reading it, but I like it so far! For me, it’s about taking bits and pieces of what she recommends, but there’s no way I could go all out like se does! I plan on giving a full review once I finish.

  24. I read the lovely bones many years ago – excellent book! I’m ready The Girl with the Dragon Tattoo right now and it is excellent! One of the better books I have read in a long time. I highly recommend it!
